Its a lovely new week full of energy from my end and hope my vegan 馃尡 friends did enjoyed the weekend that just past. Honestly it was one weekend I enjoyed so well because I did took out time to go for this special meal I prepared to share with you guys.
This recipe is that one common sauce I usually prepare with fluted pumpkin 馃巸 leaves 馃崈 but the one thing different with this very one is that the sauce was prepared without vegetable oil or margarine 馃 but all totally steamed for more good health.
The base ingredients for this recipe is the fresh loving cherry tomatoes 馃崊 and my favorite red onions which combines the fluted pumpkin 馃巸 leaves 馃崈 and other spices ingredients to make a delicious vegetable sauce (stew) we can enjoy 馃槉 with any meal of our choice ranging from boiled unripe plantains, macaroni, spaghetti 馃崫, boiled potatoes 馃 and white rice 馃崥.
For me, it has not always been just reddish sauce (stew) which usually is made with tomatoes 馃崊, but incorporating veggies in sauces. And steaming our sauce which leaves out frying with oil is one healthy lifestyle we all need. This definitely help us cut out some calorie consumption. Its a delight indeed.
Here below I will show you all exactly how I prepared this delicious delightful healthy sauce you will love.
Quantity of fresh cherry tomatoes 1 large red onions 3 hot red peppers 1 pack of tomatoes mix 1 bunch of fluted pumpkin leaves 馃崈 1 sachet of curry powder 1 sachet of thyme herb 馃尶 1/2 teaspoon of chili powder 3/4 teaspoon of salt
Step 1.
First thing we will do is pluck the leaves out from the stem as above.
Then we wash and leave it in a basket to drain properly.
Step 2.
We then gradually slice the pumpkin leaves above
And readily here.
Step 3.
Next we wash and slice the tomatoes and onions.
We have the ingredients readily prepared
Step 4.
We then will take the tomatoes, onions and hot peppers for blending
Adding the tomatoes mix and water above
And we blend above.
Step 5.
To make the sauce we place our pot on the cooker, pour the blend into it to start boiling.
Allow to boil to continue drying
Step 6.
Once it starts drying, we add our spices and salt above
We stir, add our vegetable and incorporate it into the sauce.
Step 7.
Allow the vegetable ti sink properly into sauce for just few minutes to avoid over cooking.
We set it down finally and serve with any meal of our choice.
I have always seen incorporating veggies in meals as the best option for maintaining balance when it comes to carbs and vitamins. This should be our concern when it comes the food we eat and our total well-being.
Making this recipe was amazingly simple and easy with the mind set that it鈥檚 going to be an enjoyable meal of a recipe.
