It's hard to believe we are halfway through the month of August. The vegetables have been coming in hard and fast every single day. Keeping up with processing has become my main job each day.
I've never eaten so many cucumbers in my life as I have this past month. But at least they are Keto-friendly, lol.
Between the heat and all the rainfall, the weeds have gotten out of control. I don't remember my stone paths ever looking like this before. I pulled all the onions and now have them drying inside the greenhouse.
I had planned on planting more Swiss Chard, but the seeds are still on the kitchen counter. I only have two plants at the moment. My hubby loves having fresh greens often, so I better get on it for him.
The Raddicchio is starting to form heads, and I will be cooking some of them next week.
Right beneath them, I have one large winter squash. It is the only one I see on the plant that has vined all over the end of the garden.

This is one of the eggplants that I grew this year. I made a lasagna-style dish for dinner the other day out of two of them. I may just do the same when these are ready.
This yellow summer squash was replanted after the squash borers took out the first one planted. I can see that it has a lot of male flowers and no female ones to pollinate.
This is my first time growing Hungarian Paprika Peppers. I did both hot and sweet, and both are turning a nice red color. I'm planning on drying them all to make my own paprika.
I only put 6 plants of each variety, hoping that they will produce enough for powder.
This little Cayenne Pepper has struggled all summer at the top of the tower garden. I won't be making any pepper powder from this one.
I never got around to staking up the Poblano Peppers, and now they are falling over from the weight. Perhaps next week I will pick some to stuff for dinner.
The sweet potato vines I planted in the grow bags are taking over the zucchini patch.
The ones planted in the large raised bed have grown much slower than the others. I sure hope I get some potatoes this year. It seems like it took them forever to take off.
The Basil was so abundant this summer. I've made pesto, dried some, made basil salt, and I still have more than I can use. This summer has certainly given my family an abundance of organic vegetables to eat fresh, as well as processing for the pantry shelves.
