This one is my favourite recipe. I’ve posted many recipes before, some good for their taste and some good for health. But this one is world class w.r.t to both taste and health. This is my Monday breakfast almost every week, is extremely tasty and can be cooked in about 10 minutes. This recipe can be customized in several ways to suit your taste.
Couscous is not a very commonly known cereal in Indian market. Infact, it’s a moroccon cereal. Its is used to make a variety of salads. It is mostly available as an imported food item, can be bought from big supermarkets. It looks like Daliya but differs a lot in taste. It is also a very popular dish among those practicing diet.
The best part is, it can be cooked completely in microwaves without any oil. Let’s see how we cook this.

Mint Chutney mixed with Southwest dressing

| 2. | Onion | 1 Unit |
| 3. | Red bell pepper | ¼ Unit |
| 4. | Yellow bell pepper | ¼ Unit |
| 5. | Capsicum | ¼ Unit |
| 6. | Tomato | 1 Unit |
| 7. | Maggie Masala | 1 packet |
| 8. | Salt | As per taste |
| 9. | Pepper | As per taste |
| 10. | Oregano | As per taste |
| 11. | Chilli Flakes | As per taste |
Step 1: Finely chop all the vegetables and put them in a microwave safe glass bowl.
Step 2: Add all the spices – Salt, Red chilli powder, Maggie masala and oregano. Mix well.
Step 3: Cook the vegetables in microwave for around 4 minutes.
Step 4: Now add the couscous and equivalent amount of water to the bowl. The water should be on the level of the mixture.
Step 5: Microwave the entire mix for another 4 minutes. Mix well once in between (at around 2 minutes down) and then continue.
Step 6: Your cous cous is ready now. Serve hot with green mint chutney mixed with southwest dressing.
