Hacer parrilla es todo un proceso, es un arte y técnica que no todo el mundo maneja. Por ejemplo, ¿cómo poner el carbón? Es un arte, tienes que hacer una montaña que no se caiga, ensuciarse las manos y evitar que se caiga.
Lo siguiente es prender ese carbón. Con aceite es lo más recomendable. Un papel bañado en aceite, un fósforo y listo. Ahora, ponerlo dentro de los carbones y rogar que se prendan con esa candela.
Luego de prendido el carbón, se pone la rejilla donde vas a poner la carne, esa rejilla no se lava mucho porque pierde luego la magia del sabor, sin embargo, hay que lavarla para que no se dañe tan rápido. Eso dicen, no me crean.
El carbón no debe tener una candela grande, con que estén prendidos y quemandose, basta. Si tiene una candela alta puede no cumplirse el trabajo de cocinar la carne sino de quemarla y no es la idea.
Cuando le rejilla esté caliente, se pone lo que más tarde en prepararse, el pollo. Si, señores, el pollo es lo que más tarda en cocinarse, se debe cocinar bien porque sino queda crudo por dentro, por eso tiene que permanecer bastante tiempo en la parrilla.
Junto al pollo, se ponen los chorizos, estos van botando jugo, ese jugo le va dando sabor a todo lo que se va cocinando. Es un plus buenísimo.
Después que el pollo esta listo, se va poniendo lo que tengan a cocinar, en este caso había cochino, se puso el cochino a cocinar, junto a más chorizo. Una delicia.
Para finalizar el arte de hacer parrilla, se pone la carne, en este caso, se pone o un trozo grande o en bistec. En este caso, fue un buen trozo de carne, una carne suave.
Aquí viene el secreto, la carne se condimenta solo con sal, no le hace falta más nada. Ya la parrillera tiene los sabores de las otros acompañantes que se cocinaron previamente.
Luego de que esa carne se vea cocinada por los dos lados, se saca de la parrillera y se pica, pedazo por pedazo y se vuelve a cocinar. Al estar lista, ya es hora de comer.
Se combina con una buena ensalada, bollos y yuca. ¿Qué más quieres? Es un delicioso platillo para compartir en fiestas, ya que sabe muy bien, también nos reunimos alrededor de la parrillera a oler el humo y ponernos olorosos a parrilla.
A mi me gusta con morcilla, nuestra morcilla es dulce y picante, una delicia. La mejor es la de Carúpano, creo que es el sitio donde más sabrosa la hacen.
