Here's a blast from the past when I grew some pink oysters for this #fungifriday by @ewkaw
I'll show them from finished to when they first began pinning.
This is the bloom of pink oysters at full size. Pink oysters are tricky if you let them grow to this size they begin to spore... and the spores smell like amonia. So word of warning, harvest them early and cook them asap.
This batch ended up being about the size of a softball/volleyball. Even if they have begun sporing and stink a bit cooking them gets rid of all that and they have a nice bacony taste to them.
Here is a shot of them right before they started to spore. I should have harvested them at this time to avoid the ammonia smell. Pink oysters can't be found in stores because of this, so the only way you can eat these is by growing them yourself. Definitely a tasty yet easy mushroom to grow.
Just to make things interesting here's a random photo of amber jelly roll. Looks like a brain lol.
Now back to the oysters here's a shot of them after about two days of growth. This is probably the best time to harvest them.
This is the growth after one day. The whole clump is just about the size of a softball.
Here are the oysters when they first started pinning. After cutting an opening in the block the air and moisture start the growth process. They pinned around eight hours after cutting and watering.
