You Never Know What You'll Find When You Wander Without a Plan: Wild Oyster Mushrooms & Fried Rice!
I only went out for a little run, and this happened!
The weather was just right, not too warm and not too cold, the sun came and went, and was a lovely day to be outdoors.
I hadn't planned on going into the woods, but I spotted one of those little gaps in the bushes where wild animals pass through. Curiosity got the better of me, so I went a little deeper.
And that's when I got lucky, oyster mushrooms!
Growing on some fallen tree trunks!
I didn't have a basket with me, but luckily, I had an onion net in my pocket. Time to improvise!
I decided to turn the net into something basket-like, so I grabbed a couple of twigs, twisted them together and put them inside the net to open up some space. Then I picked my mushrooms.
And I was both pleased and surprised by how deceptively spacious the little net was, I could fit so many in it!
So I headed home with a basketful of oyster mushrooms.
Once home, I soaked them in salty water with a little vinegar, just in case there were any little creatures hiding inside.
Once they'd rehydrated, their texture came back to normal, and they looked almost pristine and fresh again.
So I sliced them up and decided to make a simple oyster mushroom fried rice.
First, I sautéed some garlic and onion in olive oil, then added the sliced mushrooms with a little salt and pepper.
Then came whatever vegetables I had available.
Followed by the rice.
A dash of soy sauce, a drizzle of sesame oil, and finally some spring onions and herbs on top.
And there it was, a really lovely, simple fried rice!
And absolutely delicious, oyster mushrooms are just so meaty!
I always seem to find something interesting when I wander without a plan. 😅
