Greetings and happy Sunday, dear foodies. Once again, I wish for health, prosperity, and joy to fill each of your lives. Yesterday, Saturday, I was working on the curation report for my vegan community when the power went out. This happens daily—and, worst of all, it occurs without any set schedule and for long stretches of time that can easily exceed seven hours. Realizing there was nothing more I could do, I shut down my PC and turned my attention to other things. I wanted something sweet—a little bit of comfort amidst these challenging circumstances. At first, I thought about making a cake or a pie, but that would have required using kitchen appliances; instead, I opted for something simpler—a dish that brings back fond memories and makes me happy: CURSTARD (natillas), prepared in my own simple, egg-free version.

Saludos y feliz domingo, queridos foodies.

My mother used to make this when I was a little girl, and it was a delight. I loved sitting down to eat such a sweet, delicate dish. Sometimes I would have it warm, and other times, cold. It’s delicious either way, though I personally prefer it cold. I believe every Venezuelan mother has, at some point, made NATILLA (an custard, eggless version) for her children; that is why I see it as a dessert that embodies love and family. As far as I understand, it has its roots in an ancient Spanish dish called MANJAR BLANCO—while that version uses ground almonds, this one uses cornstarch. That said, let's get to the recipe!

THE RECIPE / LA RECETA

Time, ingredients and equipment

  • Preparation time: It takes approximately 15 to 20 minutes to make this custard.

  • Servings: These quantities yield two servings, each approximately 350 ml.

This recipe allows for slight variations (adjusting the amount of cornstarch, using different sweet spices, or omitting the sweetener). You can also double, triple, or quadruple the recipe to make a larger batch of custard.

  • 600 ml of milk (dairy or plant-based).

  • 4 level tablespoons of cornstarch.

  • 2 level tablespoons of sugar or any sweetener of your choice. You may also omit the sweetener entirely.

  • Sweet spices to taste. I used a small cinnamon stick, and for extra aroma, I added a strip of lemon peel. You could also use other citrus fruits—or even their leaves.

  • 100 ml of cold water.

  • Additional sweetener (optional). I used two teaspoons of papaya syrup.

  • Pot, spoon, measuring cups, whisk, plates, etc.

Tiempo, ingredientes y equipo

THE PROCEDURE / EL PROCESO

Place the milk in a heavy-bottomed pot. Add the sweet spices and the citrus peel or leaves. Heat over medium-low and let it cook so that the spices infuse and impart their flavors into the milk.

After about 5 minutes, add the sweetener. Remember to stir occasionally to prevent the mixture from burning.

When the milk reaches the boiling point, slowly add the cornstarch, which should be thoroughly dissolved in cold water beforehand. Remember to stir constantly to prevent lumps from forming.

Continue cooking, stirring constantly, for another five minutes. Remove from the heat, wait about five more minutes, and serve in cups or bowls. Before serving, you can remove the spices as well as any citrus peels or leaves. I usually leave them in, as I even enjoy chewing on them—they’re packed with flavor.

And now my NATILLAS (CUSTARD) are ready. I decided to add an extra touch of sweetness here with a drizzle of papaya-syrup. It’s a smooth and delicate dish. You can eat it right away, or let it rest—either at room temperature or in the refrigerator. If kept well-covered in the fridge, it can last for up to three days. It’s delicious whether served warm or cold. Enjoy!

Buen provecho!
