Let's cook vegetable noodles for today. I will be using a chinese noodle, also called pancit canton in the Philippines. You can serve this delicious dish as a snack or have it as a main meal. But usually, this is served during special occasions like birthday celebrations. The noodles, with itβs long strands, symbolizes longevity and prosperity.
It consists of varied vegetables. These vegetables are blanched or boiled/steamed for a minute to retain their texture, color and to prevent them from overcooking. The chicken stock will definitely add flavor but no worries if you donβt have, you can always use water.
Ingredients
Onion
Garlic
Celery stalk, chopped
Chinese noodle or canton noodles, 500 g
Chicken stock or water, 2 cups
Broccoli florets
Carrots, julienne
Green beans, chopped diagonally
Capsicum, chopped
Oyster sauce or soy sauce, 3 tbsp
Salt and pepper, to taste
Onion leaves
Celery leaves, optional
Preparations
Blanched or boil/steam the chopped vegetables for a minute. Drained and set aside.
In a preheated wok or deep pan, Add enough oil and saute onion, garlic and celery until soft and aromatic.
Add the chicken stock or water and bring to boil. Then add oyster sauce or soy sauce and turn the heat to medium low.
Next, submerge the noodles and stir well. Cook until the water has reduced.
Then, put in the vegetables and mix well to combine.
Adjust your seasoning with salt and pepper.
Lastly, add in the onion and celery leaves on top. Serve warm.
You may also replace oyster sauce to soy sauce, it will give you a similar flavor. Add any vegetables like snap peas, cabbage, mushrooms or cauliflower. It cooks quickly and is delicious and easy.
