This tasty recipe is so easy to make. It’s basically mixing the dry ingredients to the wet ingredients. I have altered a couple of the ingredients, I used extra Virgin olive oil instead of butter and substituting brown sugar from white. And for the Banana, you should use a banana that is very ripe with lots of dark spots To achieve a tasty and sweet muffin. The more the dark spots, the sweeter the banana and that will result to a sweet Banana muffins when you bake it.

Ingredients
3 large, very ripe Banana
1 ⅓ cups, All purpose flour (sifted)
½ teaspoon, salt
1 egg
1 teaspoon, vanilla extract
10 Tbsp, brown sugar
5 Tbsp, extra virgin olive oil
1 teaspoon, Baking powder
Almonds, (roughly chopped) optional
Procedure
- Preheat the oven for 350 degrees fahrenheit.
- Grease muffin tray.
- Mash the bananas and transfer to a big bowl.
- Combine the dry ingredients in a separate bowl (flour, baking powder and salt) whisk and Set aside.
- Add the vanilla extract, egg, sugar and olive oil into the mashed banana. Combine well.
- Fold - in the dry ingredients mixture into the wet ingredients.
- Mix well until you achieve a smooth consistency.
- Scoop the mixture into a greased muffin tray.
9.Sprinkle some chopped almonds or topping of your choice. - Bake it for 13 - 16 minutes and let it cool in a wire rack.

- Avoid overfilling the molder.
- Using an oven thermometer will help you to get an accurate amount of temperature.
- Use a toothpick test to test doneness.
