Green Papaya in Coconut Milk

Green or unripe papaya is a tasty vegan meal I always enjoy. Preparations and cooking of this dish is so simple and straightforward. A powerhouse of nutrients, skin-friendly and a helpful vegetable for lactating Mothers. The taste of Green Papaya and the Orange papaya are completely different, they also differ in texture and appearance, though they are the same fruit but harvest in different stages of development.

I use a can of coconut milk for this dish as I don’t have access to a fresh one.

Ingredients

Unripe or Green Papaya, thinly sliced
Coconut milk, 1 can
Garlic, minced
Ginger
Onion, diced
Moringa leaves
Salt and ground pepper

Preparations

  1. Preheat the pan, Add oil and saute garlic, ginger onion until aromatic.
  2. Add the sliced Green papaya and mix. Cover with lid for a few minutes.
  3. Add the coconut milk. Let it boil and simmer, cook until the vegetable is soft and tender or half of the liquid has evaporated.
  4. Add the Moringa leaves and stir.
  5. Season with salt and pepper according to taste.
