Friends, Happy Saturday everyone.

Today was a mix of good and bad, a bit chilly and sunny. Quite mixed weather you might say, but still good as there was no rain. It is definitely a bad day for me when it rains. Because the environment around us has not improved so much yet, as a result of which it is very difficult to travel during the rains.

Today I will again share sweet pumpkin recipe with you. Yes, this winter I had the opportunity to eat a little more of the relatively sweet pumpkin, beans and cauliflower. Sweet pumpkins and beans have done particularly well in my own vegetable garden. Also sometimes bought some beans from outside shops. But I bought cauliflower the most.

In fact, among the winter vegetables, cauliflower is my favorite, as long as cauliflower is available in the market, I am attracted to it. Although this vegetable is no longer available in the market after the winter season. And for this reason, we try to eat this vegetable as much as possible in the winter season. Of course, I also like sweet pumpkins, so I made a sweet pumpkin garden in my house.

See, winter vegetables are relatively more popular in our region, one of the reasons being that they are produced in larger quantities and are cheaper in terms of price. But it's good for us, more vegetables means more nutrition and opportunity to keep the environment beautiful along with nature. Tried today's recipe in a slightly different way, just considering the taste. Hope you like it too.

Recipe Ingredients-

  • 200 grams of sweet pumpkin
  • 3 onions
  • 5 green chillies
  • Coriander leaves 10 grams
  • Sugar 1 teaspoon
  • Salt 3/4 teaspoon
  • Turmeric powder 1 teaspoon
  • Chilli powder 1 teaspoon
  • Coriander powder 1 teaspoon
  • Cumin powder 1 teaspoon
  • Ginger garlic paste 1 teaspoon
  • Oil 2 teaspoon
  • Water as needed.

Preparation phase-

I sliced the sweet pumpkin and took it on a plate, then took a small amount of turmeric and chili powder and a teaspoon of sugar and mixed it with my hands.

Then I put a pan on the stove and heat the oil and put the sweet pumpkin slices in it and cover it with a lid. I took them off when they were fried.

After that, I chopped onions in hot oil and sliced green chillies, lightly fried them.

Then I added turmeric powder, chili powder, coriander powder, cumin powder, ginger garlic paste and light water along with it, roasted them for some time.

Then I added fried sweet pumpkin slices, mixed with the spices and then chopped coriander leaves.

I cooked it like this for some more time, when the coriander leaves were mixed I took them out to serve.

It's a really great tasting recipe, although it doesn't take much time to prepare and is packed with nutrients. We usually prefer this recipe with hot rice, be it lunch time or dinner time.
