In our place, geprek chicken is very famous everywhere, in fact, I have seen a lot of people selling geprek chicken at a relatively much cheaper price, but the chicken is small and when we have the opportunity or at home, we can eat as much as we want with larger pieces of chicken.
Yes, although I'm actually not very good at frying crispy chicken or battered chicken and I saw this recipe from my social media so I thought this would make it easier for me to make crispy chicken and for the geprek chicken seasoning.
As it happens, I already had the ingredients at home鈥擨 had a stock of chicken鈥攚hile for items like chilies, I bought them at the local shop earlier this evening.
Well, instead of continuing to buy fried chicken, it's better if we make it ourselves at home with my version.

I used 4 pieces of marinated chicken, some red chilies and some bird's eye chilies for the chilies. Adjust to your taste. I used 3 cloves of garlic for the flour. I used 7 tablespoons of rice flour and 3 tablespoons of cornstarch. For the seasoning, I used Royco salt and ground pepper. Oh yeah, I also use half a teaspoon of soda.

First, I prepare the flour mixture to marinate the chicken by combining rice flour, cornstarch, Royco, and salt, and mixing them thoroughly.

Finally, I added the baking soda and stirred everything again until well combined; then, I set that aside, got a bowl of water, and prepared both ingredients.

Next, I took one piece of chicken, dipped it in flour, then I dipped it in water for just 1 second, then I took it again, dipped it in flour again and fried it until it was brownish yellow. and I repeat again and so on

Meanwhile, I boil the chilies first until they soften, making them easy to grind later.

I made the seasoning a little rough, don't forget to add salt and a little Royco
Finally, I heated a little cooking oil and poured it over the chilies. I then took the chicken, placed it in the mortar with the chilies, and smashed it.
Once it's ready, I serve it right on the mortar, and I find the sambal incredibly spicy. For those of you who love spicy chicken and spicy sambal, this is perfect paired with warm rice鈥攚ow, the flavor is just right for me.
I immediately took a plate to add rice and I wanted to eat it very greedily. The spiciness was just right, sweet and spicy, and basically it was super delicious. Meanwhile, the chicken was also very crispy and finally I succeeded in making this crispy chicken.
