The other day I made a kitchari. I used what vegetables I had available and the spices I had.

This is how I made it.

Ingredients:

The Grains and lentils
3/4 cup Basmati White Rice
1 1/2 cup Red Lentils

Any vegetables, I used:
Squash, carrot, turnip, sweet potato

Spices I used but you can use all or some or any other
1/2 tablespoon cumin
1 tablespoon Turmeric
2 teaspoon cardamon
1 teaspoon ginger powder
1 teaspoon garlic powder
1 teaspoon fennel seeds
1/2 teaspoon cayenne pepper
1 teaspoon Spearmint

  1. In a saucepan or pot, Boil the lentils and rice together adding about double the flood of water to the grains and beans mix in a pot. Cook it for about 30-45 mins, when it is done you will be able to taste a softness to the rice and the lentils. You can cook the red lentils to mush or until tender(personal preference).
  2. Pour in the spices, it is all personal preference to me, I pour turmeric( enough to turn the rice and lentil mix light or dark yellow), cardamon, cayenne pepper, cumin, fennel seeds, spearmint, ginger, garlic)
  3. Heat a cast iron or other wide pan and put any oil such as coconut oil(avoid olive oil), put about 1-2 tablespoon.
    Put in the sliced ginger, leeks, then fry them, then put in the sweet potato, turnip, carrot, squash. Fry them for about 10-15 on a low simmer. Cook until the water comes out and are tender. Add spices rosemary, oregano
  4. pour the stir fried vegatables into the rice and lentil mix
  5. let it sit for 10 minutes covered
  6. Stir
  7. Serve
