A healthy dish I like is "gigantes" beans (in Greek gigantes translates into giants which is justified by the bean size).
It's an easy dish, although a little time-consuming. First, you need to boil the beans until they start to soften. Then remove them from the water and make the tomato sauce. I like to sauté an onion with some garlic and then add lots of carrots and red peppers. Smoked paprika, black pepper, salt little mustard and a little thyme and oregano and then it's time for the tomato sauce and water to "dive" into the pot. Once the sauce starts simmering, you throw the beans into a deep baking tray, pour the sauce over them and let them cook until the sauce thickens and the beans are cooked - this takes about an hour or so in a 200-degree oven.
Serve with a nice salad (tomato, cucumber, rusk and olives for me)...
... and some feta cheese and you have one perfectly healthy lunch!!
