AREQUIPE O DULCE DE LECHE HECHO EN CASA
Today we live confined to home and sometimes we do not know what to do or what to eat to alleviate the anxiety that this pandemic brings with it, which has affected us all. We have found a thousand and one recipes on the internet, but does this really work? Does it satisfy our cravings? Anyway, here I will upload my recipe for arequipe, dulce de leche, cajeta, cut milk or whatever they say in your country, so that you can have a little fun and we can make it together
Necesitamos:
We need:
2 Litros de Leche entera. Si tienes leche en polvo (como lo es mi caso) vamos a colocar litro y 700ml de agua y dos tazas de leche en polvo
500 gr Azúcar
Bicarbonato de sodio 1GR por litro de leche, en este caso usen 2gr o una cdita pequeña
1 cucharada de Mantequilla sin sal
NOTA IMPORTANTE: LA LECHE DEBE SER DE VACA ENTERA, NO FUNCIONA DESCREMADA NI DE SOYA, NI DE ALMENDRAS, SOLO ENTERA DE VACA.
2 liters of whole milk. If you have powdered milk (as is my case) we are going to put a liter and 700ml of water and two cups of powdered milk 500 gr Sugar 1GR sodium bicarbonate per liter of milk, in this case use 2gr or a small teaspoon 1 tablespoon unsalted butter
We are going to place the milk and sugar in a large pot and bring the kitchen to medium heat until the sugar granules dissolve
After this step we are going to place the butter and bicarbonate and lower the heat to the minimum that of your kitchen.
Stir every 5 minutes, but you cannot detach yourself from the kitchen because the milk may spill.
After 1 hour or an hour and a half it should start to change color, when it is in the process of changing color YOU MUST NEVER STOP REMOVING, you have to be counted until the end of the process because your preparation can burn.
When the arequipe is removed from the pot and it is semi thick, we are going to turn off the heat and let it rest until it is at room temperature.
We take a container with a lid and put it in our fridge, the longer it is in our fridge, the harder the arequipe will be.
