Hi food buddies!
Today we're cooking Menudo.
I first tasted this when i was young because this dish is very popular in every occasions in our neighborhood. Everytime my Lola cooks Menudo it's undeniably delicious!
Actually, Menudo is a mexican cuisine made with cow's stomach broth and red chili pepper. Filipino's menudo version is made with sliced pork and liver with some tomato sauce and tomato paste.
Here are the ingredients:
| 350g | Pork, sliced to bite size |
| 200g | Pork Liver, sliced thinly |
| 1-2 | Hotdogs, sliced diagonally |
| 1 medium size | Carrots, cubed |
| 1 medium size | Potato, cubed |
| 1 small | Bell Pepper, sliced diagonally, |
| 5 gloves | Garlic, minced |
| 1 medium | Onion, minced |
| ¼ Cup | Cooking Oil |
| 3 Tablespoon | Tomato Paste |
| ¾ Cup | Tomato Sauce |
| 2 Cups | Water |
| ¼ Cup | Raisins |
| 1 Tablespoon | Sugar, optional |
| Salt and Ground Pepper to taste |
For marinade:
| 3 | Calamansi |
| ¼ Cup | Soy Sauce |
Lets start cooking!
Our menudo is ready!
Transfer it in a plate or bowl, it's a best pair with hot steamed rice.
