On prepping day to day...
I made an amazing lunch yesterday.....
I won't stress you with the details but the recipe is here.
Although I will say I went down a real 'how to make crispy tofu' rabbit hole And the dressing consisted of tahini, miso, grapefruit and lemon juice, honey and a few spices.
Man it was GOOD!
And healthy AF.... which is precisely what I wanted.
My diet is pretty good, but it is a bit samey and I've been meaning to jolt myself out of this and put a bit more effort into making some DELICIOUS and different healthy lunches and dinners for a while, but I've just found one excuse or another to avoid doing this.
I've concluded that smoothies and supplements are one thing but probably the easiest way to get yer nutrition in is to simply have a diverse array of lunches and dinners throughout the week... featuring a variety of plants, seeds, nuts and pulses and some fish and tofu and plenty many many greens!
I think mainly I've just been busy with work which is why I haven't got around to doing this....
But finally Saturday I had a window but it tool a good 20 mins researching to find a couple of nice recipes then shopping, then a thorough clean of the kitchen (seemed appropriate) and then I had space and all the tings to cook.
The cooking itself was a doddle although the fried tofu took longer than I'd have liked.
What I needed was time to do all the prep phases!
Lessons Learned!
So note to self success even in simple day to day tasks is all about the prep work!
And actually finding the time to do this planning and prep.
Maybe this is a better use of evenings rather than shit on flix...?
Probably - maybe tonight I'll plan some ultimate fancy sandwich meals.
I'm salivating already!
