• Fresh or frozen cranberries, a small bag is around 3 cups.
• 1 apple, I used 2 apples. I peeled my apples and cut them to match the size of my cranberries.
• 3/4 cup of water.
• 1 cup of sugar or add no sugar for a sauce that I like, which is very tart. The apples sweeten the dish if you don't use sugar, my family can eat sugar but I can't so I make my own sauce without sugar.
• 1 medium size pan
• 1 dish that is 8 x 4 inches for your cooked sauce. You can line the bowl with plastic and once the dish has set you can invert the jelled cranberry dish over a plate and service it garnished with your favorite herbs like fresh rosemary sprigs and whole fresh cranberries. I avoid plastic and just scoop the jellied fruit and serve.

Cook the fruit with all the ingredients for 15 minutes on medium heat. You will see the cranberry start breaking apart that's when the sauce is done cooking.

Cranberries are a favorite condiment for my cultures Thanksgiving dinner. My family always used Thanksgiving as a way to come together, share good food, play some music, dance, laugh, and play or watch football. We never celebrated Columbus discovering America, but I can understand why the Italians would celebrate and feel proud that one of their people found a new land.

I don't get involved in discussions about not celebrating holidays because throughout human history one tribe of people have invaded and fought wars over another tribes territory. Picking on America's traditions as being unfair or racist, we would also have to point out everyone else's traditions are unfair and racist as well. We all should speak out and fight to stop the wars raging around the globe!
