After everyone finished breakfast the kids unwrapped presents. After the excitement of unwrapping the unknown wore off the kids started testing out their art supplies.
You will need 12 eggs, 2 cups of flour, 1/4 cup of coconut oil, 5 bananas, 1 teaspoon of vanilla, and 1 teaspoon of salt.
Throw all the wet ingredients into the blender, blend until smoothly incorporated. Pour into a large mixing bowl.
Add flour 1/2 cup at a time, whisk until well blended, keep adding flour until done.
Prior to mixing flour into the wet ingredients turn on the stoves heat to high. I use stainless steel pans but this also works with caste iron. This cures the pans so you can dry cook your crepes. Once you are done mixing the flour into the wet ingredients turn down the heat to medium.
Add a 1/4 cup of the crepe batter to the heated pan. I pick up the pan and swirl the batter in a circular fashion and spread out the batter, which makes a nice thin crepe. Watch until the batter starts drying on the edges and bubbles in the middle. It's done, flip the crepe and let cook for around a minute. I usually have two pans going at the same time. I can do dozens of crepes in 15 minutes!
I serve the crepes just like traditional American pancakes. But we add fruit and whipped cream as topping and roll the crepe up. The crepes are very flexible and you can stuff them with just about anything you can imagine. I like slathering tahini butter all over mine and top it with whipped cream
I save all my egg shells for my garden and flower beds.
E's bedroom is semi-neat, that is a minor miracle. Her Mom bought her some plastic cubes to store her growing supply of hobby tools. Her Mom helped E organize! Organizing can be fun and then everyone can work and play without getting so confused by the mess.
