When you have leftover pickle juice, don't let it go to waste. With a few added flavors and a short wait, you can whip up a batch of spicy pickles in under 6 hours. This is a straightforward kitchen hack that will have you relishing the tangy, spicy crunch of homemade pickles!

Ingredients

🥒 4 medium cucumbers
🌶️ 1 tablespoon crushed red pepper flakes (optional, for extra spice)
🧄 3 cloves garlic, sliced
🌿 1 tablespoon dill seeds or fresh dill
🥄 2 teaspoons mustard seeds
🧂 Leftover pickle juice (enough to cover cucumbers)


Instructions

1- Prepare the Cucumbers:

  • Wash and dry your cucumbers.
  • Slice them into rounds or spears, depending on your preference.

2- Spice Up the Juice:

  • If you enjoy the flavor of your leftover pickle juice, leave it as is.
  • For a spicier kick, add crushed red pepper flakes, sliced garlic, dill, and mustard seeds to the juice.

3- Heat the Juice:

  • Pour the seasoned pickle juice into a saucepan.
  • Bring it to a boil over medium-high heat until it's piping hot.

4- Pack the Pickle Jar:

  • Place the sliced cucumbers into a clean jar.
  • Make sure the jar is large enough to fit all the cucumbers and juice comfortably.

5- Add the Hot Juice:

  • Carefully pour the hot pickle juice over the cucumbers in the jar.
  • Ensure the cucumbers are completely submerged.

6- Chill and Pickle:

  • Seal the jar with a tight lid.
  • Let the pickles sit at room temperature for about 10 minutes before transferring them to the refrigerator.
  • Allow the pickles to chill for at least 6 hours.

7- Enjoy:

  • After 6 hours, your fresh spicy pickles are ready to eat.
  • Enjoy them as a side dish or a fresh snack!
