How are you all? I hope you are all doing well. Alhamdulillah I am also doing absolutely fine.
Sometimes I feel like eating something tangy spicy and light at the same time. So today I thought of making Kadhi Pakora with rice and sharing my recipe with all of you.
This Kadhi recipe is actually my own way of making it. I always make it this way at home. I am not sure how traditional Kadhi Pakora is made but this is the way I personally like to prepare it and it turns out really delicious.
First I took about 2 kg yogurt and added around half a cup of gram flour or besan to it. I mixed it very well and made a thin lassi like mixture. It is very important to whisk it properly so there are no lumps in it.
After mixing it well I added plenty of water because while cooking the Kadhi becomes thicker and the besan also needs to cook properly. So I kept the mixture quite thin and put it aside.
Now we will prepare the spices for the Kadhi.
First I finely chopped one onion and fried it until it became light brown. Then I prepared a mixture using around 3 tomatoes 5 to 6 garlic cloves and 3 to 4 green chilies. You can increase or decrease the green chilies according to your taste.
I put all these ingredients in a blender and blended them well.
Then I added this tomato garlic and green chili mixture to the fried onions and cooked it nicely.
At this stage we also need to add our spices. I added salt turmeric and mixed spices according to my taste. Cook everything well until the mixture is nicely fried.
Once the masala was ready I added it to the yogurt and besan mixture that we prepared earlier. I mixed everything very well and put it on the stove.
I kept the flame very low and allowed the Kadhi to cook slowly. It took around one hour because I wanted it to cook properly and become thick and flavorful.
While the Kadhi was cooking I started preparing the pakoras.
I finely chopped onions and added fresh coriander and green chilies. Then I added gram flour or besan. For the spices I used cumin coriander salt and mixed spices.
I mixed everything well and added a little water to make a thick mixture. The consistency should be just like the one I am showing in the picture.
Now heat oil in a pan.
Take small portions of the pakora mixture and carefully add them to the hot oil. Fry them on medium heat until they become light golden brown.
Once they are nicely fried take them out and continue frying all the pakoras in the same way.
By this time our Kadhi should also be completely cooked. You will notice that it has become thick and the color looks beautiful.
Now add all the fried pakoras to the Kadhi and mix them gently.
I also added some fresh coriander on top.
For the final touch I prepared a simple tadka. I took one onion and fried it until golden. Then I added chopped green chilies and fried them as well. I poured this tadka over the Kadhi and covered it for a few minutes so all the flavors could come together.
Now our delicious Kadhi Pakora is ready.
Some people like to eat Kadhi with roti while others prefer it with rice. Personally I like Kadhi with roti but my family loves it with rice.
So I made rice for my family and served the Kadhi Pakora with rice for them. I enjoyed mine with roti.
It turned out really delicious. You can see how creamy and flavorful it looks in the pictures. The aroma was also amazing and the combination of spicy Kadhi soft pakoras and rice was absolutely perfect.
