Assalam o Alaikum everyone. I hope you all are doing well. Alhamdulillah, I am also doing very well.Today I am sharing a very delicious Afghan recipe with you. This is called Naan-e-Roghani. Some people may also call it Afghan cookies because of its beautiful shape and slightly sweet taste. It is a wonderful homemade treat and tastes especially good with a cup of tea.I really enjoyed making these because we can make these cookies in different shapes and designs. Today I will show you three easy designs, and I will also show you how you can make a big round Naan-e-Roghani in a pot if you do not have an oven.

Ingredients

5 cups flour
1 tablespoon yeast
½ teaspoon salt
2 cups water
1 cup sugar
Cardamom as needed
Saffron if you like
Fennel if you like
Desi ghee or butter as needed
Sesame seeds for decoration
1 egg for brushing

Preparing the Dough

First, take 5 cups of flour in a large bowl. Add 1 tablespoon of yeast and half a teaspoon of salt. Mix everything very well.
You can also add some cardamom to the flour. Cardamom gives these cookies a beautiful aroma. If you like saffron, you can add a little saffron as well. Fennel can also be added if you like its taste.I personally do not like too much fennel, and I decided not to use saffron this time, so I used cardamom instead.Now take 2 cups of water in a pot and add 1 cup of sugar. Put it on the stove and let the sugar dissolve completely in the water. We will use this sweet water to knead our dough.Once the sugar has completely melted, slowly add this water to the flour and start kneading. If you need a little extra water, you can add some, but do not make the dough too soft. The dough should be slightly firm.

Adding Butter or Ghee

Once your dough is ready, add desi ghee or butter according to your preference. I added butter according to my own अंदाज़, so you can add it according to the amount you prefer.Knead the dough very well with both hands. Keep kneading until the dough becomes smooth and nicely combined.Cover it and leave it aside for about 2 to 3 hours. After this time, you will notice that the dough has risen nicely.

Making Different Designs

Now preheat your oven to 250°C.While the oven is heating, start preparing your Naan-e-Roghani.Take small portions of dough and make small balls.For the first design, take one ball and make it round. Press it gently with a rolling pin and roll it into a thick round shape. Do not make it too thin. Then use your fingers to make small raised designs around the edges. I also used a bottle to make a round pattern in the middle.
For the second design, roll another ball into a thick round shape. Use a fork to press the edges and create a beautiful pattern. Then use a spoon to make some cuts or lines in the center.
For the third design, roll the dough into a longer shape. I used a spoon that is normally used for taking out fries and pressed it on both sides to create a different design.
You can make your own designs too. This is one of the fun parts of making Naan-e-Roghani at home.

Final Touch

Sprinkle sesame seeds on top of the cookies.
Then cover them with a clean cloth and leave them for about 5 to 10 minutes so they can rise a little again.

Beat one egg very well. Brush the beaten egg over the top of each cookie. This will give them a beautiful golden color after baking.Now place them in the preheated oven. They may take around 15 to 20 minutes, depending on your oven, so keep an eye on them until they become beautifully golden.

Making Naan-e-Roghani Without an Oven

If you do not have an oven, don't worry. You can also make a big round Naan-e-Roghani in a large pot.First, take a large pot and preheat it properly. Prepare one large round Naan-e-Roghani and place it in a suitable baking pan or tray. Carefully place it inside the preheated pot and cover it.
Cook it for around 30 minutes, or until it is nicely cooked and golden. The cooking time can be different depending on your pot and heat, so check it carefully.
