Over the past few days I've been tending to a new found interest, one of which I never thought I would have! Cooking! I've never really been one for cooking, I always saw it as a chore rather than a pleasure, HOWEVER, the winds are changing haha! I find myself looking forward to getting into the kitchen and doing some 'slicing and dicing'!
A few days ago I had a craving for some roast pork and so that's what we had! It was such a lovely day that we decided to light a fire whilst the meat was cooking away on the weber, and have ourselves a 'garden burn' with all the branches that we had pruned just days before.
I'm not a 'plain jane' when it comes to food, I like a bit of flavour and spice! So, first thing I did was rub the meat, that consisted of olive oil, chicken spice, brown onion soup, finished off with some fresh rosemary cut from the garden. The only thing missing was some garlic and apple! Next up was to wrap the meat in foil ready to place on the weber for cooking!
After 2 hours of cooking it was time to unwrap the meat - and I was more than ready to eat, especially as it was all I could smell whilst tending to the fire! That's another pleasure of mine - watching and tending to a burning fire, I find it extremely therapeutic, it just does something to my soul.
I was very pleased with how it turned out, so pleased that we devoured half of the joint of meat in one sitting haha! I was also cooking some 'what should have been' roasted vegetables but instead they turned out to be 'just vegetables' lol! I got too carried with the fire that I ran out of time, and timing is everything... Lesson learnt!
Who needs an excuse to bake a cake! But just for good measure, it's someones birthday somewhere so that's good enough right! One thing I have always enjoyed doing in the kitchen is baking cakes! I have to be honest, I'm a real sucker for sweet things, I blame genetics ;) I decided to bake a Victoria sponge cake, an English baking classic, a little taste of home...
A lovely lockdown day spent in the garden filled with sunshine, pruning trees and roasting pork on the weber, oh, and cake! Simple pleasures are the best!!
