Greetings of the day lovely foodies of Hive!!!

I hope everyone is having a great start of this new week!

Some days back when I reached at my restaurant, I saw these beautiful red fruits on the table...my sister bought them for me to try!

It was the first time ever that I was going to use/prepare them...

ROSELLE FRUIT!!!

After some researches on the net, I found that they are from the Hibiscus family and present in many countries around the world and known by different names!

I also learned how to prepare them...

The plant stems and leaves are also wildly use, but let's focus on the fruits for today!

Cleaning / Preparing

Actually only the red petals are consumable while the green seed which is found in the middle is not used in kitchen!

I first started by taking out the dark red spikes which are found all around the fruit.

Next I broke off the petals (5 per fruit) and separated them from the green seed.

At this stage...I decided to try to taste the petals...

Very acidic like lemon taste!

I discarded the seeds and the spikes, and kept only the beautiful red petals to make like a 'jam' with them!

Making the jam is quite easy...

I put 300gms for the 300gms of petals that I got from the lot - the acidic taste made me add little bit more sugar!

Then add 2 spoon of water and put to cook!

I let it cook on low fire for about 1 hour and the color that it became was just amazing!

The petals became soft and the syrup was such a nice dark red color...I let the petals whole in that beautiful syrup and kept in a pot for later use!

I will let them in that pot for minimum a week and see the evolution/transformation!

Overall it was a very nice experiment with a fruit that i've never used before!

Once I am fully satisfied with the jam...after maturation I will share what I did with them - Stay tuned for that!
