Eating healthy and plant-based can be a challenge for busy families. With the right recipes, it doesn't have to be! Here are some delicious, nutrient-dense plant-based recipes that are perfect for busy families on the go.

##Veggie Fajitas

Ingredients:

  • 2 bell peppers, sliced
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon sea salt
  • 1 tablespoon olive oil
  • 8-10 whole wheat tortillas

Instructions:

  1. Preheat oven to 375 degrees.
  2. Place bell peppers, onion, garlic, cumin, chili powder, salt and olive oil in a large bowl and mix together until vegetables are evenly coated.
  3. Spread vegetables onto a baking sheet and bake for 20 minutes, stirring halfway through.
  4. Warm tortillas in the oven for 3-5 minutes.
  5. Serve vegetables in warm tortillas and enjoy!

##Creamy Coconut Curry

Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • 1 can coconut milk
  • 2 cups vegetable broth
  • 2 cups cooked chickpeas
  • 2 cups chopped kale
  • 2 tablespoons fresh lemon juice
  • Salt and pepper to taste

Instructions:

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, ginger, turmeric, cumin, coriander, cinnamon and cayenne pepper and sauté for 3-5 minutes.
  3. Add coconut milk and vegetable broth and bring to a boil.
  4. Reduce heat to low and add chickpeas, kale, lemon juice, salt and pepper.
  5. Simmer for 15 minutes or until vegetables are tender.
  6. Serve over cooked quinoa or rice and enjoy!
