These crackers are super tasty and a great treat to have around the house when you are trying to stay away from processed food and carbs.
one recipe has 91 grams of protein, 13.5gr net carbs and 136gr of fat and makes around 70 - 2" crackers, but you can cut them however you'd like

Ingredients:
1 1/2 Cups of pumpkin seeds
2 tbsp. golden flax seeds
1/2 Cup water
1/2 tbsp. Himalayan pink salt
1/2 Cup sesame seeds (minus 2 tbsp. replaced with 2 tbsp. caraway seeds)
1 tbsp. of flake salt (optional)

Procedure:
Place flax seeds in a food processor with the pumpkin seeds and process until combined (no longer than 30 seconds)

once course, add the 1/2 Cup of water, Himalayan pink salt and process until a uniform dough forms

place in a bowl and cover with plastic wrap, let rest at room temperature for at least 1 hr and up to a day.

pre-heat the oven to 350 degrees F. after dough has rested, fold in the sesame seeds, caraway seeds until evenly incorporated.
place half the dough on a sheet of parchment and with a second sheet on top press dough down with your hands and then a rolling pin to get it to spread out as thin as possible and repeat with the second half.

remove the top sheet of parchment and sprinkle with flake sea salt, pressing down on the crackers with the parchment we just removed to ensure the salt sticks otherwise it will fall off the crackers once baked.
With a pizza cutter or fancy bicycle cutter like mine :P pre cut the crackers whatever shape you'd like, I chose 2" squares, this will help the crackers break evenly after baking.

Bake for 12 - 15 minutes until the edges start to brown, take out of the oven, remove the darker edges and bake for another 8 minutes until evenly baked.

Enjoy with ham, cheese, pate or by themselves!
