Choux Shells with Chocolate Filling

Hi, dear bloggers and food lovers. I hope you’re having a great day. Today I’m going to share a sweet and tender dessert: choux pastries filled with a chewy, sweet chocolate filling. They’re simple and easy to make, and the texture is soft and melts in your mouth. I haven’t bought a piping tip yet, so I decided to make the choux pastries without one, and they turned out like this—they look like shells, don’t they? Okay, let’s get right to it.

Ingredients:

Choux Pastry:

  • 250 ml water
  • 120 grams margarine
  • 2 tbsp sugar
  • 150 grams all-purpose flour
  • 4 eggs

Chocolate Filling:

  • 250 ml milk
  • 2 tbsp sugar
  • 2 tbsp margarine
  • 2 tbsp cornstarch
  • 2 tbsp cocoa powder
  • 2 egg yolks
  • a pinch of salt
  • 1 tsp vanilla essence

Instructions:

Choux Pastry:

  • Pour the water into a saucepan

  • Add the margarine to it

  • Add sugar to the saucepan

  • Turn on the heat and melt all the ingredients until they come to a boil

  • Turn off the heat, then add the all-purpose flour to the pan

  • Stir all the ingredients until they form a dough

  • Transfer the dough and let it cool

  • Once cooled, beat the dough with a mixer and add the eggs one at a time

  • Beat until the dough is well mixed and has a texture like this

  • Transfer the dough to a piping bag

  • Pipe the dough onto a baking sheet greased with margarine

  • Place the dough in a preheated oven

  • Bake the cream puffs for 30 minutes at 200°C

  • Once they’ve risen and are fully baked, turn off the oven and let the cream puffs cool slowly inside the oven

  • Set aside

Chocolate Filling:

  • Pour the milk into a saucepan

  • Add the sugar

  • Add the margarine to the saucepan

  • Add the cornstarch and cocoa powder

  • Add the egg yolks, pinch of salt and vanilla extract to the mixture

  • Mix all the ingredients together before turning on the heat

  • Once well combined, turn on the heat and cook over low heat while stirring constantly

  • Once the chocolate filling has thickened, turn off the heat, transfer the filling to a piping bag, and let the chocolate filling cool

  • Once the choux pastries and chocolate filling have cooled, trim the edges of the choux pastries slightly

  • Fill them with the chocolate filling

  • The Choux Shells with Chocolate Filling are ready to eat
