Hoy vengo como quien defiende a una buena amiga, motivada por la repercusiรณn que ha tenido en esta hermosa comunidad la publicaciรณn del buen amigo @emiliorios. Y es que siempre que escucho la palabra azรบcar, noto cรณmo el ambiente se carga inmediatamente de un juicio colectivo, a veces mediante susurros culpables, como si nombrarla en voz alta fuera a manchar la pureza de una dieta saludable.
Hoy quiero alzar la voz, no desde la rebeldรญa, sino desde el conocimiento y el corazรณn, para contar una historia diferente: esa historia del azรบcar que mece las cunas de nuestros recuerdos mรกs dulces y que, literalmente, da energรญa a los pensamientos que ahora mismo les estoy compartiendo.
Soy madre, y antes de ser neurรณloga ya era arquitecta de los cumpleaรฑos de mi hija. Eso significaba que, semanas antes del gran dรญa, yo ya estaba planificando cรณmo hacerle, desde mis modestos conocimientos culinarios y de reposterรญa, su pastel de cumpleaรฑos, donde el ingrediente principal, su alma, es sin duda el azรบcar. Allรญ, ese polvo blanco y cristalino se convertรญa en el vehรญculo del amor.
El azรบcar tambiรฉn puede convertirse en el hilo conductor de las tradiciones. ยฟAcaso no recuerdan ustedes las galletas que horneaban sus abuelas? Yo tengo guardado, como una huella indeleble, el sabor de las mermeladas de mi mamรก. En este mismo instante, mientras leen estas palabras, sus neuronas estรกn disparando seรฑales elรฉctricas a una velocidad vertiginosa, y esa actividad tiene un costo energรฉtico enorme. La glucosa es la gasolina que las alimenta. La dopamina que segregamos cuando recibimos un abrazo, la serotonina que estabiliza nuestro estado de รกnimo; todas esas reacciones neuroquรญmicas dependen de la glucosa, de ese azรบcar que hoy me he decidido a defender.
Asรญ que yo lanzo mi sรญ rotundo al azรบcar ceremonial, a ese pastel de cumpleaรฑos hecho con amor, al ritual de las galletas, al chocolate caliente de los dรญas frรญos y al cafรฉ cargado de azรบcar en las reuniones de amigos. Porque al demonizar el azรบcar por completo, no solo estamos ignorando su papel biolรณgico, sino que nos estamos privando de una de las dimensiones mรกs hermosas de la cultura humana: la dulzura compartida.

Today I come as someone defending a good friend, motivated by the impact that the publication by our good friend @emiliorios has had on this beautiful community. Whenever I hear the word sugar, I notice how the atmosphere is immediately charged with a collective judgment, sometimes through guilty whispers, as if saying it out loud would tarnish the purity of a healthy diet.
Today I want to raise my voice, not from a place of rebellion, but from knowledge and from the heart, to tell a different story: the story of the sugar that rocks the cradles of our sweetest memories and that, literally, gives energy to the thoughts I am sharing with you right now.
I am a mother, and before being a neurologist, I was the architect of my daughter's birthdays. That meant that, weeks before the big day, I was already planning how to make her birthday cake with my modest culinary and pastry skills, where the main ingredient, its soul, is undoubtedly sugar. There, that white, crystalline powder became the vehicle of love.
Sugar can also become the common thread of traditions. Surely you remember the cookies your grandmothers baked? I have stored here, like an indelible mark, the taste of my mother's jams. And precisely in those memories, sugar is not a nutrient, but the language of the celebration of love bequeathed to us by our loved ones.
I know that if you think about it, you too will recall the memory of those milkshakes and those sweets you shared on a beautiful morning with your friends, or that cake someone brought you by surprise that kept your heart immersed in happiness for several days. And it is that sugar also has the subtle form of a smile.
Now, I will change the scene: I will leave my kitchen apron and, with my neurologist's coat, I will tell you that in that sanctuary of consciousness, sugar, or more precisely glucose as its simplest form, is the currency of life. Our brain consumes about 20% of all our energy and is an insatiable glutton for glucose. Our neurons cannot function without that fuel.

So, I give my resounding yes to ceremonial sugar, to that birthday cake made with love, to the ritual of cookies, to hot chocolate on cold days, and to coffee loaded with sugar at gatherings with friends. Because by completely demonizing sugar, we are not only ignoring its biological role, but we are also depriving ourselves of one of the most beautiful dimensions of human culture: shared sweetness.
