This is a great breakfast for when you have an extra 10 minutes on your hands! I'm still working on perfecting this recipe, as it always seems to come out chewy when I feel that muesli should have a decent crunch to it. If you have any tips, let me know :)
RECIPE: Serves 1- you can make more if you want to store it for an easy go-to in the mornings!
1 cup rolled oats
1/4 cup brown rice puffs (find these in the health food section at woolies- it was $4 for a huge bag!)
2 tbsp. Coconut
1 tbsp. LSA meal
1 tsp chia seeds
2 dates- finely chopped
1/2 cup broken blueberries
1 tsp. ground cinnamon
1 tsp. ground ginger
Dash of almond milk
1 tbsp. maple syrup
Preheat the oven to 180'
In a large bowl, mix all dry ingredients together, including the blueberries.
Add enough almond milk to loosely bind the ingredients and spread onto a lined tray.
Drizzle maple syrup over the top and grill for 5-8 minutes, removing every 2 or so minutes to flip the mix so it doesn't burn.
Allow to cool for 5 minutes and serve as you please - I served mine with a banana and some chopped pecans and almonds, but it would work great with some coconut yoghurt too!
