HI GUYS! Today I am going to share with you a wonderful dessert, one of my favorites, and also It’s a typical latin recipe. It's so easy to prepare and everybody can make it, so let's start.

INGREDIENTS
2 eggs
200 grams of grated coconut
200 grams
A few drops of vanilla

The first that we need to do it's preheat the oven to 350°F and take a tray with wax paper all over the top. Then, you need to beat the eggs with a wire whisk until you get a slightly white mixture and little bit thick. When we get this mixture, add the sugar and we mix everything very well. Later, we add the vanilla and mix again, after that, add all of the grated coconut and mix all together with a spoon. When you do this you are going to get a little dense mass, but continue mixing 1 minute more. Now we are going to take a teaspoon of the mixture and with clean hands or gloves, we are going to make small balls very carefully and put them on the tray with about 3 centimeters of separation between each one. Finally let's put them into the oven and bake about 10 minutes or a little less, everything depends on how powerful your oven is, the coquitos should be a golden color. And do not try to remove them from the tray when they are still hot, you have to wait until they are at room temperature or a little warm. You can keep them in a copper with lid and they can last up to 4 days being fresh.
