This is a real simple recipe i threw together when i was feeling super lazy that turned out great with a little zing as well. We had some Pebre gifted to us a while back and i have been experimenting with it in a few areas of my culinary masterpieces :P
Pebre:
Pebre is a Chilean condiment made of coriander, chopped onion, olive oil, garlic and ground or pureed spicy aji peppers. It may contain also chopped tomatoes. Pebre is most commonly used on bread. It is also used on meat, or when meat such as choripán is provided in a bread roll.

Ingredients
- 3-4 tablespoons Pebre
- 2 Chicken portions
- 2 large potatoes
- 20 ml olive oil
Method
- Place chicken in oven safe container with cover.
- Smear pebre evenly all over chicken.
- Set chicken to cook in oven for 20 min (covered).
- Slice potatoes into chips, coat in olive oil and place on baking tray.
- After chicken completes 20 min of cooking uncover.
- Place chips in oven with chicken and cook both for 20 min.
- Remove from oven season chips to your liking.
- Ready to serve !!!
Additional Notes
- Salting the chips before baking helps crisp them a bit more if that is what you are after, im reducing salt intake :(
- if you want to put chips in at the same time as the chicken, thicker chips take longer to cook, however they become more like baked potatoes and less like chips.
- Im not super fancy, i dont have a cover for my baking containers, i just use another baking container upturned, works well.
