Ingredients

Instructions
1- Prepare the Vegetables:
- Begin by quartering the tomatoes.
- Core and roughly chop the red and green bell peppers.
- Peel and quarter the onion.
- Peel the garlic cloves.
- Roughly chop the green chilis.
2- Blend the Ingredients:
- Place the prepared tomatoes, bell peppers, onion, green chilis, and garlic into a food processor.
- Add a bunch of fresh parsley.
- Squeeze the juice of the lemon directly into the food processor to capture all the freshness.
3- Add Seasonings:
- Include 1-2 teaspoons of sumac.
- Add 1-2 tablespoons of tomato paste.
- Drizzle 2-3 tablespoons of olive oil over the mixture.
4- Process the Mixture:
- Blend the ingredients in the food processor until finely chopped, maintaining enough texture to avoid a smooth paste.
5- Strain the Mixture:
- Transfer the mixture onto a clean kitchen towel or cheesecloth.
- Gently gather the towel around the mixture and squeeze to remove some of the excess liquid, ensuring the blend isn’t too dry.
