Instructions

  • Core and roughly chop the red and green bell peppers.
  • Peel and quarter the onion.
  • Peel the garlic cloves.
  • Roughly chop the green chilis.

2- Blend the Ingredients:

  • Place the prepared tomatoes, bell peppers, onion, green chilis, and garlic into a food processor.
  • Add a bunch of fresh parsley.
  • Squeeze the juice of the lemon directly into the food processor to capture all the freshness.

3- Add Seasonings:

  • Include 1-2 teaspoons of sumac.
  • Add 1-2 tablespoons of tomato paste.
  • Drizzle 2-3 tablespoons of olive oil over the mixture.

4- Process the Mixture:

  • Blend the ingredients in the food processor until finely chopped, maintaining enough texture to avoid a smooth paste.

5- Strain the Mixture:

  • Transfer the mixture onto a clean kitchen towel or cheesecloth.
  • Gently gather the towel around the mixture and squeeze to remove some of the excess liquid, ensuring the blend isn’t too dry.
