Turn up the sound for the sizzle ...

A hardy breakfast with a couple of eggs sunny side up. When I occasionally had breakfast out before work ( construction ) I would always ask for once over easy with the eggs. Now making them at home I can cook them just the way I like them, sunny side up. Not to runny and not to cooked.

Today I had white mushroom instead of the usual Portobello, red onion, sauerkraut and some greens. Stores didn't have any romaine lettuce, my usual choice so got a box of mixed.

Starting out with the home fries in the iron skillet.

Put them aside after done with the plate covering for warmth. Then cook up the mushrooms and onions with the leftover olive oil in the pan before adding the eggs.

I use kraut from a can. Good for the digestive tract. Chases out the bad critters. I buy the generic store brand which just has cabbage, water & salt. The more expensive kind may add something for flavor, which ruins it in my opinion.

Spinach lettuce mix in place of my usual romaine.

Finished product, WA-LA

One more thing, I got some pink Himalayan sea salt, chocked with minerals. Only buy the better kind, impurities in the cheaper ones.
