Este a帽o, por primera vez en la historia, me toc贸 hacer el guiso de las hallacas, que lleva muchos pasos y que se generalmente las hacen las abuelas o las mam谩s de la familia. En mi caso mi mam谩 siempre hac铆a las hallacas y mi abuela tambi茅n en su momento, pero como mi mam谩 no pod铆a cocinar este a帽o me toc贸 a m铆 hacer el guiso de las hallacas y armarlas as铆 que quiero compartirles c贸mo fue este procedimiento sin necesidad de qu茅 sea exactamente un tutorial, ya que yo la verdad estaba improvisando un poco. Les cuento r谩pidamente los ingredientes que utilic茅 m谩s, no tengo las cantidades exactas, porque como les mencion茅, yo estaba improvisando y yo, cuando no s茅 hacer una receta, tiendo a usar cantidades peque帽as, voy probando, agrego m谩s y todo al ojo por ciento. En mi casa las hallacas son de carne de res y carne de cochino. El guiso lleva cebolla, ceboll铆n, ajo porro, piment贸n, aj铆 dulce y ajo. Como condimentos tambi茅n lleva sal, or茅gano y pimienta, en mi caso yo utilic茅 un poquito de paprika en polvo dulce. Tambi茅n lleva aceitunas rellenas, alcaparras y pasas y vino la sagrada familia.

This year, for the first time in history, it was my turn to make the hallacas stew, which takes many steps and is usually made by the grandmothers or mothers of the family. In my case my mom always made the hallacas and my grandmother did too at the time, but since my mom could not cook this year it was my turn to make the hallacas stew and assemble them, so I want to share with you how this procedure went without the need of a tutorial, since I was actually improvising a little bit. I will quickly tell you the ingredients I used, I don't have the exact quantities, because as I mentioned, I was improvising and when I don't know how to make a recipe, I tend to use small quantities, I try, I add more and everything by eye percent. In my house hallacas are made of beef and pork. The stew has onion, chives, garlic, paprika, sweet bell pepper and garlic. As seasoning it also has salt, oregano and pepper, in my case I used a little bit of sweet paprika powder. It also has stuffed olives, capers and raisins and holy family wine.

El 29 de diciembre hab铆a colocado a sancochar la carne de cochino y la carne de res en una olla bastante grande y el agua la estuve guardando para agregarla al guiso despu茅s. El 30 en la ma帽ana comenc茅 con el proceso de picar toda la carne, en cuadrados peque帽os. En este caso, el proceso de picar la carne fue sencillo porque estuvo utilizando bistec y chuletas de cochino, as铆 que no tuve demasiados problemas para picar la carne. Tambi茅n estuvo bien picando la cebolla, el ceboll铆n, el ajo porro y el piment贸n.

On December 29 I had boiled the pork and beef in a big pot and I was saving the water to add it to the stew later. On the morning of the 30th I began the process of chopping all the meat into small squares. In this case, the process of chopping the meat was easy because I was using steak and pork chops, so I didn't have too much trouble chopping the meat. I was also fine chopping the onion, scallion, garlic and paprika.

Una vez que tuve todo picado, comenc茅 a remojar el ajo en agua para posteriormente pelarlo y picarlo. Yo estuve utilizando tres cabezas de ajo para esto, ya que la cantidad era bastante grande y quer铆a que tuviese mucho sabor. En una olla bastante grande, agregu茅 bastante aceite y todo el guiso, el cual estuve moviendo durante un buen rato hasta que est茅 hablando un poco y agregu茅 las carnes.

I was using three heads of garlic for this, as the quantity was quite large and I wanted it to have a lot of flavor. In a fairly large pot, I added a lot of oil and all the stew, which I was stirring for a while until it was talking a bit and added the meats.

Despu茅s de agregar las carnes, estuve colocando un poquito del agua que hab铆a guardado previamente del sancochado de la carne. Luego comenc茅 agregando los condimentos, or茅gano, un poquito de sal, no mucho, porque despu茅s iba a agregar las alcaparras claramente y un poquito de pimienta. Despu茅s de un buen rato, como despu茅s de 40 minutos m谩s o menos estuve agregando las aceitunas, y las alcaparras, que previamente hab铆a lavado para bajarle un poquito, la sal y las pasas. Justo despu茅s de eso, agregu茅 el piment贸n y una taza bastante llena del vino, la sagrada familia.

After adding the meats, I added a little bit of the water that I had saved previously from parboiling the meat. Then I started adding the seasonings, oregano, a little bit of salt, not too much, because later I was going to add the capers clearly and a little bit of pepper. After a long time, about 40 minutes or so, I added the olives, and the capers, which I had previously washed to reduce them a little, the salt and the raisins. Right after that, I added the paprika and a cup full of wine, the holy family.

Lo mejor de hacer las hallacas y el guiso es ir probando, porque sientes que sabe a Navidad, no s茅 c贸mo explicarlo, creo que es algo muy de la cultura. Ya cuando tuve el sabor que yo quer铆a, el que estaba buscando, estuve esperando quit谩ndole la tapa a la olla para que se secara un poco y disminuyera el exceso de l铆quido. Este guiso lo estuve haciendo para armar las hallacas el 31, as铆 que estuvo toda la noche reposando en la nevera, pero sin que se congelara.

The best thing about making the hallacas and the stew is tasting, because you feel that it tastes like Christmas, I don't know how to explain it, I think it's something very cultural. When I had the flavor I wanted, the one I was looking for, I was waiting to take the lid off the pot so that it would dry a little and the excess liquid would diminish. I was making this stew to make the hallacas on the 31st, so it was resting all night in the fridge, but without freezing.

Ya para armar las hallacas fue un proceso tambi茅n un poquito largo porque yo no estoy acostumbrada a hacer esto, siempre se me rompen y me pasa cuentas de cuentos, pero en esta oportunidad puedo decir que ninguna se me rompi贸, que pueda armar 30 hallacas en una tarde, espec铆ficamente la tarde del 31 de diciembre muy arriesgado de mi parte pero lo logr茅. Para armar las hallacas ya me hab铆an lavado las hojas, entonces a m铆 me tocaba agregarle bastante aceite con onoto, una bolita de masa.

Esta masa se hace con harina pan, que generalmente es amarilla. No s茅 por qu茅 la falsa de este a帽o le hicimos blanca, no me preguntan, yo estaba muy ocupada y ni siquiera me percat茅 de eso. Pero generalmente es una masa amarilla, es masa de ma铆z como si fuese de arepas, un poquito m谩s suave. Se coloca la bolita de masa, se extiende, esto yo lo hago con una bolsa para ayudarme, luego se agrega el guiso, yo le coloco huevo sancochado y voy doblando con ayuda de la misma hoja la masa para all谩, despu茅s doblar las hojas y sellarlo.

This dough is made with bread flour, which is usually yellow. I don't know why we made this year's falsa white, they don't ask me, I was very busy and I didn't even notice that. But generally it is a yellow dough, it is corn dough as if it were arepas, a little softer. You put the dough ball, spread it out, I do this with a bag to help me, then add the stew, I add boiled egg and I fold the dough with the help of the same sheet there, then fold the sheets and seal it.

Este a帽o no me toc贸 amarrar las hallacas, ya que hab铆a hecho muchas cosas, as铆 que este proceso le toc贸 hacerlo a mi hermanito y despu茅s de sancocharlas durante unos 40 minutos o una hora m谩s o menos, hicimos nuestra cena navide帽a que este a帽o era de hallacas en ensalada de pollo y pernil y el pan de jam贸n que no me sali贸 en la foto no s茅 por qu茅. Obviamente, para hacer mis primeras hallacas no les puedo explicar lo orgullosa de que estoy en m铆 misma porque me salieron bastante buenas, qu茅 hallacas tan brutales, seg煤n mi mam谩, ella no va a volver a hacer el guiso despu茅s de que yo lo hice y la verdad no s茅 qu茅 pensar al respecto. Estuve comiendo all谩 ac谩 durante varios d铆as de hecho la 煤ltima, ya que me com铆 fue el 8 de enero As铆 que rindieron mucho y lo 煤nico que le cambiar铆a ser铆a el color en la masa y hacerla un poquito m谩s delgada del resto la verdad es que me gustaron much铆simo las hallacas que hice por primera vez y esperemos que este a帽o 2025 tenga un poquito m谩s de ayuda y tambi茅n que haga m谩s hallacas porque que bendici贸n es tener la nevera llena de hallacas y simplemente recalentarlas. Espero que les haya encantado conocer el proceso de esta receta, alg煤n d铆a les har茅 un tutorial un poquito m谩s detallado, nos leemos pronto!
