Small Quantity. Faster To Prepare Delicious Hallacas

Happy day, everyone! Back in the community, whenever I have the chance to indulge in a little something extravagant, I find the means to do it with what I have in my pantry. With Christmas just three months away, I was thinking about making some glorious hallacas, and I'm already craving them. Luckily, I had most of the ingredients for this dish at home, and my sister-in-law recently gave me some hallaca meat, which made my eyes light up with excitement. I figured that just one of these would satisfy my craving, and it did.

Feliz día, mi gente. De nuevo en la comunidad, cuando tengo la ocasión de materializar algunas extravagancias, busco los medios necesarios para realizarlas con lo que tengo en mi despensa. A tan solo tres meses para la Navidad, estaba pensando en unas gloriosas hallacas y ya, me provoca comerlas. En casa, afortunadamente, contaba con la mayoría de los ingredientes que lleva esta preparación y mi cuñada hace unos días me regaló un poquito de carne de hallaca y se me abrieron los ojos de emoción. Pensando que así sea, una que hiciera, saciaba mi capricho y así fue.

I gathered everything I had and began preparing; I was only missing three ingredients, which wouldn't affect the outcome in any way. And so, I began to bring my hallacas to life. As we know, this dish is considered an intangible cultural heritage of our country and one of our culinary treasures with its own unique identity. For me, it's very easy to prepare, given that I've been making it for many years. I consider it a quick meal to make, but without neglecting the steps; I say quick because the amount I'm going to prepare is negligible, but very meaningful because the steps are correct.

Reuní todo lo que tenía y comencé con mi preparación; solo me faltaron tres ingredientes, que de ninguna manera me iban a alterar el resultado. De esta forma comencé a darle vida a mis hallacas. Como sabemos este plato, es considerado patrimonio cultural inmaterial de nuestro país, y una de nuestras riquezas gastronómicas con su propia identidad. Para mí es muy sencillo de preparar, dado que llevo muchos años haciéndolo. La considero una comida rápida de hacer, pero sin descuidar los pasos a seguir; digo rápida porque la cantidad que voy a preparar es irrisoria, pero muy significativa porque los pasos son los adecuados.

Everything turned out as I expected; I followed my intuition and, by gathering all my ingredients in small quantities, I managed to get everything I needed to start preparing it. I always make sure that when I make this traditional dish, I freeze some leftover leaves from previous batches. With this reserve, I got exactly eight hallacas and one giant bollito. And I still have some of the stew left over.

Todo resultó como lo esperaba; seguí mi intuición y, al reunir todos mis ingredientes en pocas cantidades, logré todos los implementos necesarios para comenzar mi preparación. Tengo la precaución de que, cuando elaboro este plato tradicional, siempre guardo en el congelador algunas hojas que me quedan de las preparaciones anteriores, con esta reserva; salieron exactamente ocho hallacas y un bollito gigante. Y aún me quedo algo del guiso.

Ingredients:

  • 150g beef chuck
  • 150g chicken breast
  • 100g pork
  • 160g olives
  • Seasonings (oregano, bay leaves, salt, thyme, cumin, annatto, sugar)
  • Oil
  • ½ chopped bell pepper
  • ½ chopped onion
  • 3 chopped sweet peppers
  • Sprig of cilantro, scallions, and garlic, all chopped
    Wine

Ingredientes:

  • 150 g de pulpa negra
  • 150 g de pechuga de pollo
  • 100 g de cochino
  • 160 g de aceitunas
  • Aliños (orégano, hojas de laurel, sal, tomillo, comino, onoto, azúcar)
  • Aceite
  • ½ pimentón picado
  • ½ cebolla picada
  • 3 ajíes dulce picado
  • Rama de cilantro, cebollín y ajo, todo picado
  • Vino

Preparation:

First, I placed the chicken breast in a pot and cooked it briefly; then, once it had cooled, I divided it in two: I chopped one half into small squares and reserved the other, as well as the broth.

I prepared the oil, I colored it with the annatto powder; I already had some reserved in a jar.

I parboiled the meat a little because I was afraid it would be tough; I didn't know if the meat my sister-in-law gave me was dark meat, I wanted to play it safe.

La carne la sancoché un poquito por temor a que fuera dura; desconocía si la carne que me regaló mi cuñada fuera pulpa negra, quería ir por lo seguro.

Preparing the stew:

Preparación del guiso:

First step: In the same pot where I tenderized the meat, I heat the annatto oil; I add enough oil and then the green ingredients and sauté them. (The scallions, cilantro, and some garlic cloves are from my garden). Next, I add the paprika along with everything else chopped, the salt, and mix it all together, letting it sauté well. The order doesn't matter.

Primer paso: La misma olla donde ablandé la carne, la monto al fuego con el aceite de onoto; coloco lo suficiente y vierto los ingredientes verdes y voy sofriendo. (El cebollín, el cilantro y algo de maticas de ajo, son de mi huerto). Seguidamente le vierto el pimentón con todo lo demás picado, la sal, mezclo dejando que se sofría muy bien, el orden no importa.

Second step: I add the meat and mix. Now I add the diced chicken breast and the pork. I keep mixing to combine everything.

Third step: At this step I add the powdered seasonings, the bay leaves, the capers (if I have bacon, the olives and the raisins); this is the moment to add them.

Tercer paso: En este paso le vierto los aliños en polvo, las hojitas de laurel, las alcaparras (si tuviera tocino, la aceituna y las pasas); este es el momento de añadirlos.

Fourth step: Cover and let it simmer for 15 minutes to release its juices; mix, then add the sugar and taste as you go. Make sure the stew has all its flavor.

Cuarto paso: Tapamos y lo dejamos por 15 minutos para que suelte sus jugos; mezclo, ahora le agrego el azúcar y vamos probando. Debemos comprobar que el guiso tenga todo su sabor.

Fifth step: Add the wine, enough to cover; cover for five minutes so that the stew absorbs the wine and develops its flavor.

Quinto paso: Añadimos el vino, la cantidad suficiente; tapamos por cinco minutos para que el guiso se impregne del vino y agarre gusto.

Sixth step: We uncover it and stir. Finally, we gradually add a little flour until it bubbles. We turn off the heat and let it rest.

Sexto paso: Destapamos, removemos. Y por último, le vamos agregando un poquito de harina hasta que haga burbuja. Apagamos y bajamos del fuego, dejamos reposar.

Preparing the dough:

We used the reserved chicken broth, added annatto to color the water, mixed in finely chopped cilantro leaves, and then added the flour and kneaded the dough.

Usamos el caldo de pollo que estaba reservado, le colocamos onoto para pintar el agua, le añadimos diminutas hojitas de cilantro bien picadito y agregamos la harina y amasamos.

We brushed the previously washed leaves with oil and placed a portion of the dough on each one, then rolled it out. Before rolling, we covered the leaves with plastic wrap and proceeded to unroll the dough.

A las hojas previamente ya bien lavadas, les untamos aceite y colocamos una porción de masa para luego estirarla; antes le ponemos por encima un plástico y procedemos a extenderla.

Once stretched out, we add the stew and the garnishes: we take a strip of chicken from the other part of the reserved breast, add an onion ring, some capers, a strip of paprika (this is the moment to also add the olive, raisins and strip of bacon; these ingredients are missing).

Ya estirada, le ponemos guiso y los adornos que lleva: una tira de pollo la sacamos de la otra parte de la pechuga reservada, le ponemos un aro de cebolla, algunas alcaparras, tira de pimentón (aquí es el momento de colocarle también la aceituna, pasas y tira de tocino; estos ingredientes están ausentes).

Now we protect our hallaca by covering it very well with the leaves, folding them carefully. This time, since we were only going to make a few hallacas because of the amount of leaves we had, there was going to be some dough and some ingredients left over. When this happens, we end up making little balls by chopping the remaining ingredients and, along with the stew, we mix them into the dough. This way we make the little balls, which are also delicious.

Ahora resguardamos nuestra hallaca tapando muy bien con las hojas, doblando cuidadosamente. En esta oportunidad como iban a salir pocas hallacas por la cantidad de hojas que había, iba a sobrar quiso y algunos ingredientes. Cuando pasa esto terminamos haciendo bollitos picando el resto de los ingredientes y junto con el guiso lo unimos a la masa, de esta forma hacemos los bollitos, que también quedan deliciosos.

Previously, we prepared a pot with water, letting it boil; when it was very hot, we put the hallacas in and left them for twenty to thirty minutes.

Con anterioridad hemos montado una olla con agua, dejando que hierva; cuando esté bien caliente, introducimos las hallacas, las dejamos por veinte a 30 minutos.
