French Bread

Sundays at home when we do not plan anything, are usually quiet days of rest, we spend the day reading a book, fixing the house or just watching TV, then when the evening falls, the routine changes a little, we plan to play board games or watch movies; in the meantime of indecision. I have clear dinner and prepare the famous fast and delicious Sunday breads, this time I accompanied them with tomato slices, chopped chives (home grown) and slices of chicken mortadella finely chopped. The recipe for this bread changes a little, due to the dedication I put into it, since it was the way it was taught to me. Right away let's go with the recipe.

Ingredients:

  • 500 grams of all-purpose flour
  • 50 grams of sugar
  • 20 grams of yeast
  • 30 grams of margarine
  • 5 grams of salt
  • 250 milliliters of water

For the filling: It is up to you to choose. I had tomatoes and mortadella for the moment, but any sausage is good.

Preparation:

Place the flour in a bowl in the shape of a volcano, add all the ingredients one by one; the sugar, yeast, margarine and salt, always place it to one side.

We integrate everything and we add the water little by little, (the one that the dough asks for) and we knead from the bottom up, when everything is united we take it out of the bowl and continue kneading very well on the table, for several minutes (the technique is that it does not stick to the fingers).

Knead to stretch it like a roll and cut pieces of the dough and weigh them, they should all weigh 150 grams, this is the weight that each French bread should have. Then we begin to make little balls of dough (applying the "boleo" technique), we press the dough with the palm of the hand and the table and move it in circles.

Then we extend the pieces with the rolling pin, stretching from the middle upwards and from the middle downwards, giving it a triangle shape, we proceed to roll up pressing at the beginning and continue, at the end we make a single cut to decorate the bread.

Let stand for half an hour covered in a warm place, then after this period of time, we put in the oven watching until golden brown. My oven has no graduation, my calculations are approximately twenty minutes.

Pan Frances

Los domingos en casa cuando no planeamos nada, usualmente son días tranquilos de descanso, pasamos el día leyendo un libro, arreglando la casa o simplemente viendo TV, después al caer la tarde, la rutina cambia un poco se planea jugar juegos de mesa o ver películas; en ese ínterin de indecisiones. Yo, tengo clara la cena y preparo los famosos panes domingueros rápidos y deliciosos, en esta ocasión los acompañe con unas rodajas de tomate, cebollín picadito (cultivado en casa) y rodajas de mortadela de pollo picadas bien finas. La receta de este pan cambia un poco, debido a la dedicación con que me esmero ya que fue la manera que me lo enseñaron. De seguida vamos con la receta.

Ingredientes:

  • 500 gramos de harina todo uso
  • 50 gramos de azúcar
  • 20 gramos de levadura
  • 30 gramos de margarina
  • 5 gramos de sal
  • 250 mililitros de agua

Para el relleno: Queda a su escogencia. Yo tenía para el momento tomates y mortadela, cualquier embutido que le coloquemos es bueno.

Preparación:

Se coloca la harina en un bol en forma de volcán, se van agregando todos los ingredientes uno a uno; la azúcar, levadura, margarina y la sal, esta la colocamos siempre a un costado.

Integramos todo y le vamos agregando el agua poco a poco, (la que vaya pidiendo la masa) y amasamos de abajo hacia arriba, cuando todo este unido se saca del bol y continuamos amasando muy bien en la mesa, por varios minutos (la técnica es que no se pegue de los dedos).

Amasamos para estirarla como un rolo y picamos trozos de la masa y pesamos, deben pesar todos 150 gramos, es el peso que debe llevar cada pan francés. Luego comenzamos a hacer bolitas de masa (aplicando la técnica del boleo), aprisionamos la masa con la palma de la mano y la mesa y la movemos en círculos.

Luego extendemos las piezas con el rodillo, estirando de la mitad hacia arriba y de la mitad hacia abajo, dándole una forma de triangulo, procedemos a enrollar presionando al principio y continuamos, al finalizar se le hace un solo corte de adorno al pan.

Dejamos reposar por media hora tapados en un lugar tibio, luego pasado este periodo de tiempo, metemos al horno vigilando hasta que doren. Mi horno no tiene graduación, mis cálculos son veinte minutos aproximadamente.
