This cake is very special for oat lovers. I made it with caramelized pineapple slices and the pineapple sirop invaded the whole cake making it really delicious. I added butter to the tin where I cooked it to create a strong color without burning the sirop. As soon as it is cooked you have to take it out of the tin, otherwise the pineapple slices will get glued on the tin.
When I cook this cake I usually make it with fruits because the fruits smooth the taste of oats and at the same time you are eating a very nutritive preparation. I use prunes, apricots, apples, and pineapples as my favorite fruits for this cake. The spices are important to obtain a flavored cake and the fruits sirop cover the cake on the outside. I recommend to eat it very cold and as it gets older it will get better.
To prepare this cake you will need the following ingredients:
4 cups of oats
3 cups of milk
2 eggs
1 1/2 cups of sugar
1 pineapple
100 grams of butter
1 cup of self raising flour
1 spoon of baking powder
2 spoons of cinnamon
1 spoon of nutmeg
2 spoons of vanilla essence
Preparation:
First, soak the oats in the 3 cups of milk for 1 hour

Peel and cut the pineapple in slices, you will need for slices only. Remove the centre of each slice
Cook the pineapples in a sirop made with 1 cup of water and a cup of sugar until they get golden. Cook them in the same tin where you are going to cook the cake
Place the flour and the butter in a bowl. Work the butter with your fingers
Add the sugar and the eggs and mix well
End up adding the vanilla and the soaked oats, mix well and pour the mixture on the tin where you cooked the pineapple slices
Cook at 180掳C. Don't let the cake in the tin, you have to demold it before it gets cold
