It always feels like with christmas people have to go all in foodwise to make something more spectacular, something more weird, and something more complicated.
Especially now christmas is falling after the weekend, it means there are a lot of days off to do stuff. That means not every day has to be filled with something social if you ask me. And why not go for the classics in food then?
Because there is nothing bad about spending a good amount of time on cooking something nice. But a lot of that also has to be on just waiting if you ask me.
This classic Indian dish was the main suspect for a christmas meal for. Everything from scratch, everything fresh!
Indian food is such a rewarding food to make if you ask me. It does take a lot of time, and yes, it needs a crapload of spices in there. But once you have those spices in the house, you will be good to go for a long time and it can be used on anything.
I used this recipe from Recipetineats.com which is actually one of the most chill recipe websites for getting inspiration for food if you have no idea what you want to do. Also with shifting for the amount of persons in the website with a slider makes you buying list a lot easier
The base
The base of nearly every Indian dish has always something to do with onion garlic and ginger, so makes sure you have that in the house. In the recipe you can see what kind of spices should be added and you can also adjust this yourself ofcourse. I also made the choice of adding extra diced tomatoes in there as you can never have enough veggies right?
After adding everything you just toss in you choice of protein which in my case was lamb and let that all simmer for 100 minutes in there. Chill mode!
Naan
For the naan I had never made something like this before, as I have never tried to make bread or something as well. So this was a first at this was an experiment! I used this Dutch recipe from Rutgerbakt.nl which was also super easy.
Adding flour, yeast, melted butter, salt, yoghurt and water to each other making it into a big ball of dough. Letting it rise for an hour and then roll it out. Drizzle some garclic and melted butter over for the color and flavour and this was also way more easy that I had expected.
The conclusion is that stuff that takes time doesnt haven't to be super complicated actually. So why make 700 dishes when you can also just have a decent dish and a chillmode on christmas eve.
I am really happened the way it turned out (and a bummer that I did not take more snaps of the process, aka the bomb that when off in the kitchen while making it so.
