It's. my wife's birthday on Thursday but it wasn't possible to get all of our family together then. So we organised a tea party for last Sunday afternoon. She wanted to keep it simple, so I took on the task of making Scones. The idea was to have a cream tea. Scones, strawberry jam and clotted cream. It's a bit of a tradition in the UK.
There is some controversy over how the word 'scone' should be pronounced, some way sc-own while others say scon ignoring the e on the end. In my family they are definitely called scons.
I ended up baking 48 scones. 16 cheese ones for those who wanted something savoury, not eaten with strawberry jam and cream. 16 fruit scones, definitely eaten with strawberry jam and cream. And then I experimented by making some with crystallised ginger.
My wife and I had been to a cafe once where ginger scones served with lemon curd and cream were served and we really liked them. The lemon curd went well with the ginger. So I thought I would make my own version. I basically followed a fruit scone recipe but replaced the dried fruit with the crystallised ginger with I chopped up to about the size of raisins.

All the scones were eaten, including the ginger ones. So I guess everyone enjoyed them. My sister-in-law wants me to make some ginger scones for a charity tea party she puts on to raising money for cancer.
The photo isn't brilliant. I meant to take one with all 48 layed out nicely but I forgot and the kitchen was in such a mess I couldn't find anywhere to do it. It's okay ladies, I didn't leave it in a mess for my wife to clear up.
