Yesterday, was fathers day and my birthday my daughter was home with my grandson, except for my eldest daughter who is also married, she and her family could not join us because of their religion, they don't attend birthdays.
Speaking of fathers day, my father is already in heaven so as with my kid’s father but then ”happy fathers day to all fathers out there.”
Since my two kids were here I cooked them the dish that they likely to taste it's one of Korean dishes.
Before my birthday it was Saturday I gave the list of needed ingredients to my daughter for her to do the grocer they had a car so it is easy for them to get it at the Korean store.
Yesterday morning they came home carrying the groceries that I need intended in cooking a dish for them.
I wanna share my recipe...
kimchi tofu stew.
Ingredients:
1 tbsp. Vegetable oil
1/2 kilo pork cut into 1/2 inch pieces.
1/2 onion thinly sliced
1 tbsp.chopped ginger
1 1/2 cups chicken broth or pork broth.
1 1/2 cups kimchi
1 jalapeno chili thinly sliced
2 tsp. soy sauce
Salt and pepper
1/4 kilo of Enoki mushroom ( shredded)
1 small can of Vienna sausage ( cut into half)
How to make it
Heat vegetable oil in a medium pot over medium-high heat add pork and cook until starting to brown for about 3 minutes, add onion, garlic, and ginger and cook for about 2 minutes add 1 1/2 cup of chicken broth or pork broth cover until pork is tender for 10 minutes.
Add kimchi,enoki mushroom, vienna sausage, jalapeno, soy sauce cover and return to boil. Season to taste with salt and pepper add the tofu, you can add green onion if you want and cook for about 5 minutes and it is done. When serving you can sprinkle it with green onion.
My kids said that it’s was yummy but my other kid could not withstand the spiciness.
