Hi Hivers! Today, let's make cassava cake, one of the Filipino desserts. Cassava cake is a traditional Filipino moist cake. It's a very popular dish here in the Philippines, where it's eaten for merienda and also served during gatherings and other special occasions. If you're Filipino, I'm sure you're familiar with this meal.
My aunt wanted to try to make this dish to add to her business. She's the owner of Mom's Pastries, which is now Bing's Pastries, and the one who gave us the free cake that I mentioned in my previous blogs. Last week she tried to make this dessert, cassava cake, which turned out to be so good that you would really buy it because of its taste. I tasted several versions of cassava cakes back then, but this one stood out. And I would love to share this with you all.
Here's how she prepared cassava cake...
✨ CASSAVA CAKE INGREDIENTS ✨
1 kilo - kamoteng kahoy or cassava
2 cups - coconut cream
1 cup - sugar
1 cup - evaporated milk
1 cup - condensed milk
3 pcs. - eggs
½ tsp. - salt
1 tsp. - vanilla
½ cup - margarine
1 - cheese
✨ THE MAKING (procedure) ✨
[1] Wash the cassava thoroughly before peeling the shell. After peeling the shell, wash it again to eliminate any dirt from the cassava. You can cut it into pieces to make it easier to grate.
Hold the grater firmly with one hand on a cutting board or in a bowl. With your other hand, rub the cassava in an up and down motion on the grater, then transfer the grated cassava into a container or a bowl. You can also keep the grated cassava soaked in water while grating the remaining batch.
[2] In a large mixing bowl, add the grated cassava together with coconut milk, sugar, evaporated milk, condensed milk, eggs, margarine, and vanilla extract. Then, set it aside after fully mixing.
(Don't forget to squeeze out all of the water or liquid from the grated cassava.)
[3] Grease the pan with butter or your trusted non-stick baking spray. Add grated cheese to the mixture and mix again, then pour it into the greased pan. Top it with grated cheese, and bake it for an hour before chilling it.
And there you have it! This smells and looks delicious. Yum!
Smooth and creamy, a delightful dessert that's so simple and easy to make! You can eat cassava cake warm or chilled, but I prefer to eat it chilled.
