I'm an Agriculturist.
A student Of The Federal University Of Agriculture. (Abeokuta)
I'm currently undergoing my I.T (industrial training).
And I'm learning a whole lot practically from the training...
Well, Recently we went to an enterprise called
"Cassava Processing"
I'd like to talk About Cassava.
Well for those of you who don't know what Cassava is let me enlighten you π
Cassava is a nutty-flavored, starchy root vegetable or tuber.
Native to South America, it's a major source of calories and carbs for people in many countries. Nigeria, Thailand, and Indonesia are the top cassava-producing countries in the world.
Here in Africa we get a whole lot of products from Cassava.
We get cassava flakes (garri), Fufu, flour,and so on!! There are lots of things we get from processing garri.
At the Cassava processing Unit we were taught the steps it entails in processing Cassava and I'd be majoring on Garri production.
It's one very Common food gotten from cassava.
Here are the steps we where shown at the farmππ₯π±
Firstly the Cassava is Harvested...
And then Peeled
After which they are soaked in water for Days so that they can become soft.
(note that they start to ferment once they are peeled)
In the picture below you can see them soaked in water in a heap.
After they are soaked for a while they become soft and Then we mash them to smaller bits.
Using a sieve to make sure the extracts are Small in size.
After mashing we drain the water leaving only the very Soft mashy residue.
Next, we put them in a bag sack dry them for about 48hrs...or more depending on how you want it.
Then we take the dried Cassava residue to a grinder and grind them to give a fine dry floury Texture.
After which we heap them into a drum and take for the Frying process.
How do we fry ?
A frying machine used for industrial processing is in place
So we simply pour the flour into the machine and Stir while it's being heated by the machine.

After frying
We Sieve it with a sieving machine as seen below too
The sieving machine separates the stony Grains from the Smaller grains.
The smaller grains are what we need
So, after sieving it out we Package it into bags here are some pictures of The packaged Cassava flakes ready for sale and consumption. (Garri)

What's your favorite part of the processing?
well, My favorite part is the Frying part...
Because you get to see fine powdery flour turn to small crunchy grains by the process of heating.
Here in Africa, Cassava flake otherwise known as Garri is a very integral part of our Carbohydrate diet.
When eating it we accompany it with various things to make very appetizing meals.
It can be eaten as Flakes with groundnuts milk, sugar etc
Or In solid form as Eba with varieties of Soup depending on the soup of your choice.
