Yesterday, I cooked a roast dinner for my family. It turned out really well! It's a meal I absolutely hated as a child and now as an adult, it's one of my favorites! Mostly because it's so simple but also because it's delicious!

First I seasoned the meat with salt, pepper and a beef a steak spice from Epicure. After letting the meat rest for a bit and come to room temperature, I added some extra virgin olive oil to the slow cooker and turned it on high so I could sear the meat on high heat to capture to flavors in it and give it a nice colouring.

Next, I added some carrots, 3 onion seasoning. I use this instead of a large onion because my kids won't eat onions. This way, I can get all the flavor but they don't realize it! :) I also added quite a bit more beef and steak spice as well as salt. I let that cook in the slow cooker for around 2 hours and then I added some potatoes. You can use any size or kind - we like these because they are little and easy; pre washed and ready to go! After adding the potatoes, I put the lid back on and let it cook for another 3 1/2 hours.

Funny enough, that last photo looks a little sloppy because I was about to take a bite and realized I forgot to take the photo! Oops! But it was amazing and I'm happily going to be eating left overs today.....
