Tonight after work, I shortly made my way to the kitchen to rummage around for some supper. There were multiple choices, but I wasn't extremely hungry. I sometimes eat oddly, because it is just me and that is just how I do.
Before I finish telling you about this "salad" I tried, I want to tell you a tiny story about today. I like to call these my "Old Lady Stories" and for some reason, I seem to have more and more of these stories going on, I don't know why.

I work at home and so I have a work phone for my job. When I make a call out, I have to press 9 and then 1 before I dial my number. Today I started to make a call into a webex meeting my department was having and somehow I accidently hit the 1 twice and didn't realize it. In a second, I got a call right back where this nice lady said she was from the 911 emergency line and had I just dialed 911? ! YIKES!! I told her if I did, it was not on purpose and I apologized. She asked me my address to confirm the location and I told her. She said it was ok and I apologized again.
20 or 25 minutes or so later (I wasn't timing it) as I was in the meeting, I saw a sheriffs car drive around behind my house. I have a horseshoe drive, but also, at the top it splits and also goes around to my Uncle's property next door. I knew as soon as I saw it that it was here for me ! In a second I saw he had turned around and was going back out, but I still knew he would come around to the front. Fortunately I did not have my camera on for the meeting, so I jumped up, grabbed a nicer looking lounger...LOL !.... smoothed my hair around so I wouldn't look like I really needed help and before I could get to the door, there was a knock, knock knock. I opened the door and sure enough there was a nice young patrolman there checking to make sure all was well. I told him it was and that the operator had called me back to confirm. He said he understood, but they always follow up these days. I apologized AGAIN.... thanked him for coming and for his service..... and I promise I did not hit on him or try to drag him into the house or anything.... ahahahahahaha.... he was cute though, so I thought about it.
(No I didn't ha ha)
So that was my "old lady story" for today. The folks in the meeting never knew I was gone. When I got back to my desk they were still talking nonsense er, uh, I mean business.
So back to the Tomato Salad.
Here in the south we LOVE our fresh tomato sandwiches in the summer. Normally, the best tomato sandwiches are made with white bread, mayonaise (Duke's to be exact) and salt and pepper to taste and look kind of like this.
Summer is gone now it is for certain, but some of the gardens are still putting out their season end fruits. My Mom had some volunteer tomato vines come up in the edge of her flower garden, so late in the season they started gifting her with some small but very tasty tomatoes. She has been sharing them since there are so many more than she can eat before they go bad. She had given me some on Sunday, so when I got to the kitchen I thought I would have some of them for supper. I didn't have any bread, so my thoughts turned to the crackers I have and I thought, "wonder about a tomato cracker with mayo instead". I knew it would not be the same, but still, I gathered up the crackers, mayo and tomatoes and headed for my TV chair.
Before I could get started, I seemed to remember that I had seen something called Tomato Salad on Pinterest one time that used crackers. I'm not sure why it's called salad, but ... there it was.
I came to the computer, pulled up Pinterest and entered "Tomato Salad" and multiple pins came up showing the same thing. Sure enough, just tomatoes, mayo, salt & pepper and crackers instead of bread.
I then went back to the kitchen and cut up the few tomatoes I had previously just sliced. I cut them into smaller pieces and put them in a bowl.
I added a dollop of mayo. I wasn't sure how much to use. I wasn't making a lot, so I was just "eyeballing" it. Added salt and pepper and then I stirred it up. The mayo and tomato juice pooled a little in the bottom, so I drained some of it off, but I'm not sure it would have mattered a lot. I then stirred it around to coat the tomatoes.
I crumbled the crackers in last so they wouldn't get too soggy too fast. I had read that it was better to eat it pretty immediately.
I put it in the yellow bowl for it's photo shoot. 馃槀
So there it is !
I understand if you don't care for mayonaise or tomatoes, this might not be so appealing, but because I really like both, I thought it wasn't half bad and I would definitely eat it again if I had crackers and no bread. It helped that the tomatoes were still fresh and summery tasting. I had to add a little more mayo than when I first started because it was a little dry at first, which makes me think maybe I should not have drained some of the initial juice out.
I hadn't planned on making a post of it when I started, but it was the first time I had done this, so I thought "Why not ??"
