Decadent Peach Cobbler

Cobbler is comfort food! It’s decadent and delicious and has a history of being the dessert that our forefathers turned to when they were short of ingredients and time. If you have a craving for something sweet and filling, cobbler will hit the spot every time, it’s “that” scrumptious.

Additionally, it’s super easy to make and comes together in no time using ingredients that you’ve probably got on hand in your grocery cupboard. It is often made using tinned fruit, which cuts the steps involved in making the filling, but I’ve found that fresh fruit made in homemade syrup is just so much tastier.

Ingredients

Topping

  • 1 ½ cups flour
  • 4 tablespoons of sugar (brown or white)
  • 1 ½ tablespoons of baking powder
  • ⅔ teaspoon cinnamon
  • ½ teaspoon nutmeg
  • Pinch salt
  • 1 ½ cups coconut cream

Filling

  • 4 ripe peaches/ nectarines (or a combination of the two)
  • ⅔ cup water
  • 4 tablespoons sugar
  • Heaped tablespoon marmalade
  • 4 tablespoons lemon juice
  • ½ teaspoon nutmeg
  • ⅔ teaspoon cinnamon
  • 1 heaped tablespoon vegan margarine

Vegan yogurt or whipped coconut cream for serving.

Method

Peel and slice the peaches off the stone.
Melt butter in a saucepan. Add sugar, marmalade, lemon juice, spices and water to the pan. Add peach slices and cook for 8 minutes.

Grease a 25cm flan dish. Add peaches in a layer over the bottom.
Return remaining cooking liquid to heat and cook down until the liquid has a syrup-like consistency. Pour syrup over the peaches.

In a mixing bowl, combine flour, salt, spices and sugar. Add coconut cream and blend until a soft dough forms (do not over mix). Drop tablespoons full of the batter onto the peaches. Use up all the batter.

Bake in medium oven at 180 degrees Celsius for 35-40 minutes until the topping is golden brown and crumbly.
