This recipe is suitable for vegetarian and gluten free diets. I am not a vegetarian (yet!) nor do I have issues with gluten but those near and dear to me are and have. If you have issues with cholesterol however this may not be a suitable dish for you. Can't please everyone.
Ingredients:
2 cups grated zucchini (about 2 medium sized zucchini)
1 large egg
1 half cup parmesan
1 half cup corn starch
salt (to taste)
pepper (to taste)
vegetable oil to cook in
2 cups shredded cheese (I used Tex Mex)
Method:
After you have grated the zucchini wrap it in some cheese cloth and squeeze as much liquid as you can from it. I used my Kitchen Ninja to grate mine so it came out a little less than a puree but it doesn't have to be that fine.
Add the egg, parmesan, corn starch, salt and pepper and mix well.
It should end up almost like a pancake batter.
Heat a couple of tablespoons of oil in a fry pan over medium/high heat.
Pour some of the batter in the pan and spread it with a spatula to an even thickness. I kept mine to less than the size of a slice of bread as they can break up trying to flip them if they are too big.
Fry each side til golden brown 3 to 4 minutes a side approx.
When each side is browned cover one "pancake" with some of the shredded cheese.
Place the other "pancake" on top and gently press down with your spatula.
Once cheese is melted it is ready to serve.
Goes well with a bowl of tomato soup or with a dollop of sour cream.
Feel free to add other ingredients such as garlic or onions.
Makes about 6 Grilled cheese.
