Greetings fellow steemians. This photo is horrible but in my introduction I did mention I wasn't a very good photographer. I would have taken another but I was too hungry to wait and dived in.
This dish came about because I looked in the fridge and saw a multitude of items that needed using up. Well maybe not all the items but I got carried away.
the ingredients:
1 eggplant
2 zucchinis
1 lb of mushrooms (sliced)
3 stalks of celery (chopped)
1 medium yellow onion (chopped)
6 cloves of garlic (chopped)
1 can of green lentils (drained)
1 can of spaghetti sauce (any flavor you like)
parmesan cheese
tex mex cheese
italian seasoning
Peel and slice the eggplant into 5mm strips. Slice the zucchini the same way. In a 9x13 casserole dish construct a lasagna in the normal layering manner but use the eggplant and zucchini as the "noodle" layer.
In an oven preheated to 400F place the covered dish and cook for 1 hour. Let rest 15 minutes. Serve. Enjoy.
Because this dish uses a lot of vegetables it is going to come out with quite a bit of liquid. If so desired use a baster and remove the extra liquid.
