It's gluten free and low in carbs essential things for many people nowadays. Besides I had a big bunch of broccoli I needed to use up.
Ingredients:
3 cups riced broccoli
2 eggs
1 quarter cup corn starch
3 -4 cloves garlic (minced)
1 tsp italian seasoning
pepper to taste
1 quarter cup parmesan cheese
1 quarter cup corn starch
2 cups shredded cheese divided
pasta sauce
pizza toppings of your choice
Microwave the riced broccoli for 2 minutes to soften and make steam. Once hot press with a cheese cloth or paper towels to remove some of the water. Let cool. Mix in the parmesan, half the shredded cheese, spices, and corn starch. Add the eggs and mix thoroughly.
Preheat oven to 425F.
Spread the mixture evenly on pizza pan lined with parchment paper. Press down gently with back of spoon till mixture is an even thickness and reaches the edges of the pan. Bake for 20 minutes.
Spread pasta sauce thinly on crust. Too much makes the crust soggy. Add toppings of choice and cover with the remaining shredded cheese. Place back in oven for 10 minutes or until cheese is melted.
Makes one medium pizza
