Wonderful and blessed start of the week, today I share with you the recipe for a quesillo that I prepared to enjoy this weekend, it is my favorite dessert with my favorite vegetable which is the pumpkin, the pumpkin besides being delicious is rich in nutrients and very versatile in the kitchen, here is the step by step of this recipe.
- 500 grams of pumpkin
- 4 eggs
- Condensed milk
- 1/2 cup milk
- 1/4 cup sugar
- 1 teaspoon vanilla
- 1 teaspoon rum
- 1/4 teaspoon cinnamon
Para preparar este quesillo lo primero que hacemos es lavar y pelar la auyama la cocinamos al vapor al ablandar hacemos un puré y dejamos enfriar, luego preparamos un caramelo colocando en una quesillera el azúcar y una cucharada de agua dejamos cocinar hasta que se torne color ámbar esparcimos por toda la superficie de la quesillera con mucho cuidado para evitar quemarnos y reservamos.
To prepare this quesillo the first thing we do is wash and peel the pumpkin, steam cook it when it softens, mash it and let it cool, then prepare a caramel by placing the sugar and a spoonful of water in a quesillera, let it cook until it turns amber color, spread it all over the surface of the quesillera carefully to avoid burning and set aside.
In the blender place the milk, condensed milk, puree, eggs one by one, making sure they are in good condition, add the rum, vanilla and cinnamon and blend until the ingredients are well integrated.
Pour this mixture into the quesillera, cover and cook in a bain-marie in a pot with water that covers three quarters of the container and always check that the water does not evaporate and cook for approximately one hour or until a toothpick comes out clean.
Once ready, let it cool, unmold it with the help of a plate and take it to the refrigerator to enjoy it cold, this quesillo is very delicious.
