Culinary friends, a pleasure to share with you again, as I have said, and shared in other publications, I am on a somewhat strict diet, I have sought ways to comply with it to the letter, however, sometimes we have to make an exception, when we have no other choice, believe me I try every day, comply, but it is not easy.

Anyway, recently it was my birthday, obviously I had to celebrate it, eat my cake, I confess that I was worried about it, because of my diet, I can not eat any sugar, no flour or dairy, so I tried by all means to find a recipe that would fit my needs, however, I did not succeed, so as I said, I had to make an exception, and make my cake moderately healthy.

Together with my mother, we searched for a recipe, keto style, simple, with few ingredients, half healthy, so I could eat my tortica:

• 6 eggs
• 1/2 cup sugar
• 2 cups of oat flour
• Vanilla
• 1/2 cup skim milk
• 2 tablespoons butter

Amigos culinarios, un gusto compartir con ustedes nuevamente, como bien he dicho, y compartido en otras publicaciones, estoy en una dieta algo estricta, he buscado la manera de cumplirla al pie de la letra, sin embargo, a veces nos toca hacer una excepción, cuando no nos queda de otra, créanme lo intento cada día, cumplirla, pero no es nada fácil.

En fin, hace poco fue mi cumpleaños, obviamente había que celebrarlo, comerme mi tortica, confieso que eso me tenía preocupada, por la dieta, no puedo comer nada de azúcar, ninguna harina ni lácteos, entonces, intente por todos los medios buscar una receta que se amoldara a mis necesidades, sin embargo, no lo logre, entonces como dije, me toco hacer una excepción, y hacer mi torta medianamente saludable.

Junto con mi madre, buscamos una receta, al estilo keto, sencilla, con pocos ingredientes, medio saludable, para poder comerme mi tortica:

• 6 Huevos
• 1/2 taza de azúcar
• 2 tazas de harina de avena
• Vainilla
• 1/2 vaso leche descremada
• 2 cucharadas de mantequilla

Let's get to the preparation:

I confess that I was watching the whole process, of course as an assistant, helping my mom with the ingredients, as I show you in the pictures, she was placing and mixing, first in a bowl I add the sugar with the butter, there I was beating with a paddle, until I got that texture, then, in another bowl, I put the eggs aside, just in case, one went bad, well she knows more than me hahaha, my mom used to make cakes, they were very rich, for certain health reasons, she had to stop.

But well, this was a special occasion, you know why hahaha, so there we both were, we continued.

The eggs were added to the sugar and butter mixture, with a touch of vanilla, then the flour was added, and we continued beating with the paddle, while she was beating, I was greasing the pan with flour and butter.

Vamos a la preparación:

Confieso que yo estaba viendo todo el proceso, claro como asistente, ayudando a mi mamá con los ingredientes, como les muestro en las imágenes, ella iba colocando y mezclando, primero en un bol agrego el azúcar con la mantequilla, allí iba batiendo con una paleta, hasta agarrar esa contextura, seguidamente, en otro bol, yo coloque los huevos aparte, por si acaso, alguno salía malo, bueno ella sabe más que yo jajaja., mi mamá antes hacia tortas, le quedaban muy ricas, por ciertos motivos de salud, tuvo que dejarlo.

Pero bueno, esta era una ocasión especial, ya saben por qué jajaja, entonces allí estábamos las dos, seguimos.

Se agregaron los huevos a la mezcla del azúcar con la mantequilla, con un toque de vainilla, luego se agregó la harina, y se siguió batiendo con la paleta, mientras ella batía, yo engrasaba la bandeja con harina y mantequilla.

Once all the ingredients were mixed and added, the only thing left to do was to transfer it to the tray, and then put it in the oven.

Una vez mezclado y agregado todos los ingredientes, asi nos quedó, ya solo quedaba pasarlo a la bandeja, y después meterla en el horno.

By the way, I took the opportunity to try the mixture, and it was really tasty, I remembered when my mom used to make her cakes, and she would leave us the tray to eat what was left.😅

Por cierto, yo aproveché de probar la mezcla, y la verdad estaba muy rico, recordé cuando antes mi mamá hacía sus tortas, y nos dejaba la bandeja para comernos lo que quedaba.😅

Finally, after almost an hour in the oven, we decided to take it out, we had the hope that it would rise a little more, but nothing, so as not to burn it, no way, that's how it stayed.

There is no doubt that it was very rich, yes, my few guests were fascinated, the bad thing is that it was very little hahaha, but well I know that from time to time, I could eat it, of course I told my mom, that for the next time we try not to add sugar, but honey or stevia (suggestion of my friend @gelart, since she also made me a cake, and then I will share with you how she did it). 😍

Finalmente, luego de casi una hora en el horno, decidimos sacarlo, teníamos la esperanza de que levantara un poco más, pero nada, entonces para que no se quemara, ni modo, asi quedo.

No cabe duda, de que quedo muy rica, eso sí, mis pocos invitados quedaron fascinados, lo malo es que era muy poquito jajaja., pero bueno ya sé que de vez en cuando, podría comerla, claro le dije a mi mamá, que para la próxima probemos no echarle azúcar, sino miel o estevia (sugerencia de mi amiga @gelart, ya que ella también me hizo una torta, ya luego les compartirá como lo hizo). 😍
